In beloved memory of Crab who gave it his best run but eventually died with honor and covered in delicious sauce. Private service was held at Liziqi’s dinner table and attended by grandma. @@kinsperez3808 Christmas dinner here in Norway takes a minimum of six months if you're doing it right, it's how long the meat needs to be in salt so it gets tender and red. And we ferment things too, even fish. Pretty sure it's common everywhere that had a historic need to store food trough the winter. Also, all alcohol is made trough the fermentation process and I'm pretty sure most cultures invented that, so definitely not an Asian thing. Letting something marinade for 3 days doesn't have anything to do with fermentation though, that's just common sense if you like good food.

I love the way Chinese eat their food. The use of chopsticks shows us how much they appreciate their food where they don't gobble things up. They pick every bite little by little. They can go hefty it they want to but this clip shows otherwise. Liziqi has been doing the labour and still, they look so patient savouring the exquisite meal together.
Yeah I've noticed that difference too! Although I think this mainly comes from hardship and not having much food around, so you learn to savor every bite. In Chinese cuisine meat is often cut into little pieces and mixed with other things to make a dish. When I moved to America, I was so suprised that people often ate steak and pork chops and giant pieces of meat all by themselves. In most parts of China that is an unimaginable luxury!

Here is the rough translation of her recipe:
Chinese drunken crab
4~5 cloves of star anise, 1 stick of cinnamon, 3 or 4 Bay leaves, a whole ginger sliced, a chunk of rock sugar. Boil these ingredients in a small pot of water for 10 minutes, then let it cool.
8 pieces of dry preserved plum, 2 scallion, sliced ginger, 1 lemon sliced, rind of a whole orange, a handful of sweet olive flower. Soak these ingredients in cooled spice water. To achieve best result, keep the bowl in fridge and let the ingredients steep for 2 days.
On the bottom of the steam tray, lay some sliced ginger and scallion, wash and clean 8 crabs, steam them until done (about 15 minutes). Take the crabs off the heat and let them cool.
Take the steeped spice broth from fridge, pour in some Shaoshing rice wine, Baijiu liquor, and soy source, the ratio of Shaoshing to Baijiu to soy source should be 5:1:2. Drop cooled crabs into this mixture, make sure that the mixture will cover crabs' mouth. Cover the pot, keep it in fridge for 2 more days, and voila! start to enjoy yourself.

I find it hard to use western multiple knife to cut things. I use one same 4 inch wide cleaver for vegetables and meat. Just plan out what to cut first. Smaller knives need more energy to cut and they are unstable especially cutting round vegetables into small slices or dice. I wonder if that's. The reason why other cooking channels that uses the multiple knives and they cut hard round food like potatoes they usually cut in big chunks or need "hacks" or specially designed lil cutters to help them cut. It's just too easy to slip and cut ourselves with the small and light knives.
Right. I always got amazed of the same fact. Genius!

drunken crabs,醉蟹. using alcohol to preserve food，cook food is the very traditional way in East China， especially in Zhe Jiang province , fisher man live a long time on board ,they need a way to preserve their food , salt is not preferred cause fresh water is more precious when you are on the ocean with no one to help , so Chinese fisher man use wine on almost everything they take on board, chicken,meat,pickles. they also use wine to preserve newly harvested fish,shell,shrimp,crabs,cause there is no fridge in old days. i myself am from that province and my family still has some private wine-preserved dishes for holidays. we also use wine dross to make some weird but the most delicious food（in my view）,we use wet wine dross to wrap meat，chicken，fish，let them in fermentation for at least several months. our ancestors never waste anything from hard work.

Thanks. First I wondered what kind of ketchup she used to preserve the crabs. Then, I watched the white water, then I thought, ah it must be alcohol. Some of Chinese food use alcohol to make a good flavor. In my country, we call it 'arak'.
I am Muslim and absolutely in ore of how she does everything ...apart from eating the pork and using wine in her cooking and so on..but everything else is amazing ...and watching her is soo relaxing ..love her vids
