Burdock root!! Love this. It's so good for liver and skin issues. It grows abundantly in many parts of the world, you might be able to dig some out in your garden!

I live in NY- we have a lot of Asian supermarkets- I find it at one chain called H mart(which I believe is Korean) but they sell burdock root or gobo for very cheap! Making this today :)

gobo is one of my favourite vegetables ever! Sometimes the hard side of a kitchen sponge halps to clean it (without soap of course hahaha). When not in Japan I have to travel an hour to get it so I always get a couple and clean and freeze it. When i don't have time and I'm going to fry or bake it I press the abura age hard between some layers of kitchen paper that work for excess oil as well. I still trying to make my own abura age since it is so hard to get where I am now :(
so many tips and hacks!!!! I'll definitely try the sponge scrub !! without soap! haha gobo has such a unique flavor which can be addictive to some people. I'm one of them! so good! you have to come back to Japan! haha

I’m not familiar with those packets you are using, but I do make dashi stock at home. My understanding is that it requires to boil bonito flakes. If those packets have bonito in their ingredients the it isn’t vegan. I know some vegetarians eat fish but those people typically call themselves pescatarian. Please forgive me and my ignorance if I’m incorrect in your soups ingredients. But I could look them up since I don’t know the brand to verify myself. Thank you. Your recipes look delicious.

I am obsessed with the japanese sweet potato!! There's another potato that is dark purple but tastes like a delicious sticky custard desert with a touch of what strikes me as rose essence. Its sooooooo good. I'm not completely sure what it's called so if anyone knows please let me know. Also, I am aware that there are just regular purple potatoes that taste same as their white cousins. The special one is definitely shaped more like a sweet potato. Yum! Now I want to go to my local Asian store 🤔🤪

Is the inside of the potato purple? If so that's still a sweet potato and it's actually common Okinawa. You can find the purple sweet potato kitkat there only. I haven't seen one of them for ages myself. Luckily my local shop stocks the japanese sweet potato.

What’s in the dashi packet? Is there bonito in it, that wouldn’t be vegan or vegetarian. How much salt? I use simple kombu plus other sea veggies, usually wakame, sometimes arame, nori, hiziki. I’ve thought of using dulse, which is grown off the Atlantic coast of America, it’s red, mild, and can even be munched on as a snack. A man I spoke with who grows it takes great pride and care in how it’s grown and harvested, and he’s part of a cooperative that passionately cares about their impact on the ocean. He’s expensive, though. It’s all done by hand. But it’s nowhere near Fukushima. I’m concerned about buying sea veggies from Japan, ever since the Daiichi disaster. I only know of one American brand that tests for contamination and they only test for one isotope, they’re more expensive because of the extra safety steps they take. They did immediately move the location where they harvested after Fukushima, which is better than other companies. The FDA in the U.S. told me back then, that they didn’t have the budget to do comprehensive testing. They were just occasionally sending a runner to randomly buy packages from local stores and testing, but nothing systemic.
Dashi refers to soup stock including vegetable stock, kombu stock and shiitake stock. The most popular one is fish stock, but you can use any stock you have on hand^^ I'm sorry my direction here was confusing.

I am obsessed with the japanese sweet potato!! There's another potato that is dark purple but tastes like a delicious sticky custard desert with a touch of what strikes me as rose essence. Its sooooooo good. I'm not completely sure what it's called so if anyone knows please let me know. Also, I am aware that there are just regular purple potatoes that taste same as their white cousins. The special one is definitely shaped more like a sweet potato. Yum! Now I want to go to my local Asian store 🤔🤪

Is the inside of the potato purple? If so that's still a sweet potato and it's actually common Okinawa. You can find the purple sweet potato kitkat there only. I haven't seen one of them for ages myself. Luckily my local shop stocks the japanese sweet potato.

Sake for water and mirin for sweeter! but sweeter is usually a lot sweeter than mirin! so please go little by little as you adjusting the taste! Thank you Ratna!

What’s in the dashi packet? Is there bonito in it, that wouldn’t be vegan or vegetarian. How much salt? I use simple kombu plus other sea veggies, usually wakame, sometimes arame, nori, hiziki. I’ve thought of using dulse, which is grown off the Atlantic coast of America, it’s red, mild, and can even be munched on as a snack. A man I spoke with who grows it takes great pride and care in how it’s grown and harvested, and he’s part of a cooperative that passionately cares about their impact on the ocean. He’s expensive, though. It’s all done by hand. But it’s nowhere near Fukushima.
I’m concerned about buying sea veggies from Japan, ever since the Daiichi disaster. I only know of one American brand that tests for contamination and they only test for one isotope, they’re more expensive because of the extra safety steps they take. They did immediately move the location where they harvested after Fukushima, which is better than other companies. The FDA in the U.S. told me back then, that they didn’t have the budget to do comprehensive testing. They were just occasionally sending a runner to randomly buy packages from local stores and testing, but nothing systemic.

Dashi refers to soup stock including vegetable stock, kombu stock and shiitake stock. The most popular one is fish stock, but you can use any stock you have on hand^^ I'm sorry my direction here was confusing.
