    Great recipe. Like the use of buttermilk.
    Quite a few ideas here - like allowing dough to rest before kneading, always covering dough with a wet napkin and best of all leaving parathas to rest for as long as 3 hours.
    Very soft and silky roti, definitely worth a try.

    Used this for divali and roti remained soft until yesterday when we had the last of it. Soft, flaky and so yum. Also used gulab jamoon recipe, finally got a recipe that was easy and got the texture I've been looking for. Thanks much for sharing your knowledge and techniques.

    Hello from Bermuda 🇧🇲. This dough looks super moist I’m definitely going to try your vinegar/lemon juice tip. In your opinion which one works best also do you prefer one brand of flour over another ? I know sometimes that makes a difference in recipes also. Much appreciated and thank you for your recipe

      Hi, great to hear from you. I'm not sure which brands you have in Bermuda, but in Trinidad I like to use Five Roses or Country Pride. Also, I usually use vinegar because I always tend to have that on hand, but the lime juice works just as well. Enjoy 😊

    Hi sis, quick question.. what milk did u use for the bust-up shot ..I keep seeing in the comment buttermilk but I never heard u mention anything about buttermilk u said milk.. can u specify if its regular milk or buttermilk., Thanks, sis

      Hi, I use full cream milk and add the vinegar. Although vinegar is used to make a buttermilk substitute, the ratio of vinegar to milk in my recipe is not enough to make a rich buttermilk. The purpose of the vinegar is just to soften the gluten in the flour and make it super soft and silky. So never mind the buttermilk comments, just use full cream milk. Hope this clears it up 🥰

    I usually add a lil vinegar to my cakes when I bake to make them extra moist so I trust you when you say to add vinegar or lemon juice to the roti dough. Thanks for the tip!

      Hi, I left it for 5 minutes to relax the dough, and then kneaded for about 5 minutes (maybe less), just until the surface of the dough is a bit smooth.

      So I tried this yesterday and got a few layers. I used a mix of shortening and butter. It tastes more like a biscuit than a croissant. Also, I did the oil and fold twice.

    Adding the vinegar,together with the milk, the texture of the dough change, making it soft, and the roti did came out SOFT and FLAKY. The best ever, from all other recipies of paratha.

    If I skip the lard, would it make any difference in the texture and taste? If so, can the lard be substituted with vegetable shortening? I don’t eat pork.

    How do you keep it warm and from drying out once you've cooked it? Any tips? I'm gonna try this for a large get together and I don't want it to dry out while, I cook each one.

      Hi, excellent question. I use a styrofoam roti cooler, lined firstly with kitchen towels and then roti paper or wax paper. You want the roti to touch only the wax paper so it doesn’t dry out. Then as you cook each roti place it immediately into the line cooler and keep it wrapped it tightly and covered. The steam and heat helps it soften and stay soft. 😊
