Hi, thank you 🙏🏼 Yes, you can use a stand mixer on low with the dough hook attachment. But don’t over-mix, only knead the dough until it’s combined and smooth.

Hi 😊 Having the dhalpuri soft when you make it is a great start. You want to prepare a cooler lined with a kitchen towel and then some roti paper/wax paper. As soon as the roti is cooked, put it in the lined cooler and seal it closed. The stream helps keeps the roti soft even when it cools. Also, adding the vinegar in the dough helps keep the roti silky. I added a few other tips in the video. Try it and let me know what you think 😉

I usually do the storing in the cooler as you mentioned. I usually add a little yeast to the flour. Is that ok or not?
