    Thank you to my friend Edzen and her entire family for warmly inviting us to their home and sharing some of the best Filipino food with my wife and I, that we had during our trip to Manila, Philippines.
    Tondo is an area in Manila that has a pretty bad reputation, and is know for not being the safest area of Manila to visit. But I have a friend Edzen, who is from Tondo, and she invited me over to her house, saying that her Mom would be cooking, I knew it was an opportunity that I did not want to miss. We arrived to Tondo, deep in Manila, and met up with Edzen and met some of her family. Her Mom is one of the most well known Filipino food cooks in the entire neighborhood, and she even has her own small carinderia (local restaurant).
    We first started cooking, and Edzen’s Mother showed me how to make dinuguan, which is a Filipino blood stew, and one of my personal favorite Filipino dishes. The blood is cooked down with vinegar, and creates a full bodied rich sauce. And it was definitely the best dinuguan that I’ve ever had. We also had ginataang kuhol, which are a type of snail dish from Bicol, which was cooked in coconut milk, and sinaing na tulingan, which is fish boiled in banana leaves with some kind of a fruit and herbs. Finally, for dessert we had biko, a sticky rice and coconut milk dessert. It was an amazing home cooked Filipino food meal!
    Tondo is full of Manila street food snacks, and so after lunch, we walked around the neighborhood, met some incredible people and friendly kids, and had some street food snacks. Here are the snacks we ate in order of eating them in the video.
    Banana Q - 12 PHP ($0.24)
    Ginataang halo halo - 20 PHP ($0.40)
    Binatog - 10 PHP ($0.20)
    Kutsinta - 5 PHP ($0.10)
    Isaw - 5 PHP ($0.10) per skewer
    It was a wonderful day eating home cooked Filipino food and spending time hanging out with Edzen in Tonod and eating more street food snacks. Although Tondo is a rough area of Manila, there are so many amazing and friendly people that live there.

    I'm half filipino and live in the US, so I'm not immersed in all of these great foods as often as I'd like to be. Mostly because my Mom can only get her hands on so many of the ingredients she needs. I've really, really been loving your videos on filipino food. It's great seeing it home cooked AND what kind of things are offered on the streets. These help me feel at home, in an odd way, since you do so well with talking about the area/culture too. I also have to commend how incredibly opened minded and respectful you are in the face of trying new foods that would probably scare off most travelers (which is understandable, food culture is SO different everywhere). But countries like this are all about not being wasteful, and making something good out of what you've got! Thank you for sharing!

    it's wonderful that you were able capture both the high end (i.e. sofitel buffet) and also normal day to day Filipino food (i.e. carinderia and street food). I love how authentic your videos are. you are making us (Filipinos abroad) crave all the food that you're trying. ☺ Next time that you're back in the Philippines, try to go to other provinces as well, there's more regional delicacies/food that you will surely love. wishing you more success in the future.

      It's dangerous that you may not come out alive if you go deeper in the streets of Tondo. If they saw you as your face is not familiar, bad guys will approach for something that is not good. I guess you know what I mean. All place have bad guys but this place really have a bad reputation.

    OMG yes!!! Dinuguan is my all time favorite Filipino food. I grew up with Filipinos in Japan... my babysitter was a Filipino grandmother who used to beat our asses with her hard slipper. So many birthdays, family parties, etc just loaded with the best Filipino dishes you could imagine! I fell in love with Dinuguan. But now that I think about it, I've never had the pork version. I've only always had the goat meat/blood version! Either way, it's sooooo good. My mouth was watering from the begining to the end of the video! Thanks Mark, once again, for sharing all of this with the world! Cheers!
    (P.S. if you're ever in Hanoi area, let me know! I'm leaving Seoul to live in Hanoi in a few weeks. ^^)

      Danny Fenty yes, chavacano is a language spoken in zamboanga city which is from the philippines. zamboanga is the asia's latin city, spanish influence is very strong

    Mark I know you love spicy food so I wish you could visit Bicol in the Philippines! That is where you can eat all spicy dishes! Bicol is well known to use chillies in every dish ❤️ you can even try ice cream chilli flavour! 🌶🌶

    hey Mark, that fish dish is a bit salty and sour because originally it was meant to last a long time, that dried kamias imparted the tangy taste. The banana leaves keeps the fish intact (because as you reheat the dish several times, the fish tends to get way too tender that even the bones would become soft due to the acid from kamias) and also imparts an aroma to the dish

Isaw is really one of the most popular street food in the Philippines, they have a B-B-Q stall almost every corner in manila selling different meats from pork bbq, to chicken, isaw and other pork or chicken intestines/organs! no parts of chicken/pork is wasted! sarap! (yum )

    I would love to try that! I'm Mexican from California my family is from Durango and they make "sangre" (blood) in some states in Mexico they call it Moronga its so good. That reminds me of that the blood dish.
