A tip from a baker for vanilla syrup: a lot of the flavor compounds in vanilla denature in heat, so for a more complex flavor, add the vanilla after melting the sugar and removing from heat!
Super interesting bit of info!! Adding the instant espresso powder to cold water as well would preserve coffee flavonoids so overall, skipping the hot water bit would be a win!

Your videos always make me crave a fresh cup of coffee. I really appreciate how you are unintentionally helping me build a little tiny coffee shop in my apartment. ❤
If you don't have the energy or fridge space to freeze-distill milk I've found a can of evaporated milk is about 80% comparable. You get the texture of whole milk with about 60% less water content, but the difference is since evaporated milk is heated is has some caramel-y toasted milk notes and isn't as clean a flavor, still works in a pinch though.
Use vanilla sugar. I keep a few used vanilla beans (after making crème brûlée or similar) dry them and chuck them in the sugar container. Or if you find very low grade vanilla beans split them and throw them in the sugar container. Voilà after a few days you have vanilla sugar.

I dont drink coffee but love brewed cacao. I watch you and James Hoffman for tips on drink building/brewing and apply that to cacao grounds as best I can. I love your enthusiasm, matter-of-factness, and detailed explanations. Thank you!
No joke, just made the vanilla bean-saffron-orange water syrup and it is INCREDIBLE! I had all the ingredients on hand already. Milk is currently in the freezer, but I made the latte with regular milk while we wait and it is outstanding, I love the flavors! I can't wait for the freeze-distilled part, never tried it before! Thanks for your other vid explaining how to do that!
Wow. I just made the first one, then saw this video listed. I'm cheap and most of the time when I want a coffee drink, I want it now and without a lit of fussing. So this is my go to coffee drink made at home. On really hot days I make some strong instant espresso over ice then add a scoop of vanilla bean ice cream.

4:59 the accuracy and confidence for pouring the hot syrup into the smallest opening does not go unnoticed (and ending the pour without spilling a drop OH)
I think this commentary style works well for instructional videos like this! it's clear and easy to follow and very visually appealing with the closeups on the drinks when you pour them. the live performance for things like product reviews are more fun/lively/engaging, so maybe that's something to consider? i like that you included a simple recipe! i dont have the espresso machine, so i usually do pourover black coffee (idk how it's called in english) instead of espresso, but you reminded me that i could try instant coffee as well! because of milk and syrup it's taste is balanced and it tastes like an average latte with normal espresso (i made it right after watching the video)
I just found your channel ( July 2024) and I think this post was so fun and interesting to see the different lattes you made. My go to is a shot of fresh espresso on ice with a spritz of vanilla syrup and cold foamed milk. I will for sure make my own syrup now. My granddaughters regularly come over for a latte - cold or hot. Your clear voice and instruction are a big bonus. Thank you. ❤
I like this format. It would be fun to see the prices of each ingredient and add them up as you build each recipe. For fun, also add total time to make each recipe
Hey Morgan, I really enjoyed this format. I loved the building up from simple for days when you’re short on time to complex for those weekends or holidays when you want to lavish a little more attention on yourself or dear ones. Really enjoyable. Thank you.
This is the first espresso video in a long time where I learned so many new things! Omg, I'm so glad I found your channel. I can't wait to try to make my own syrups this way. I've always used extracts, but now I want to try with actual vanilla beans. I've already made my shaken espresso for the day, but I'm thinking of all the wonderful possibilities for tomorrow!
Loved this format! So soothing and now I want to try and make all my own drinks! 😍 You made it super easy to follow, and told us how to simplify the complicated steps. Love!
I think this format feels very professional, but do whatever you are most comfortable with! If it's less editing work to do it the other way, go for it! If this is less work, this is also just as nice!
That was so fun i love it!! I'd love to see more vids like this where the scale of commitment/intensity of the drink and process involved is on display!
Thanks for the inspiration! I’m going to experiment with some saffron, orange blossom and chai for a autumnal beverage. I’m currently experimenting with guava paste for iced tea. A nice alternative to Hibiscus.
loved the format with the intro and conclusion done by Talking Morgan! and the instructional portion done by Voiceover Morgan! It was personable but made it easier to focus on what you were doing during the drink build. Also, I really appreciate you including easier levels of a tasty drink in the same video of the fancy drink because fancy drinks are fun but I'm not putting that much work into my coffee and it's nice to get the more accessible version at the same time without getting weird coffee shame from someone being snobby (to be clear, you are fancy and kind not snobby)
I actually use that same Vanilla Syrup recipe, but you can throw the ingredients into a blender for ~1m. Friction Blend tends to be less effort & easier cleanup than Stovetop.
Absolutely love the voiceover videos, and I thought this was a good modernized version. Would be nice to have one or two talking head segments sprinkled in that show your personality or a quirky moment. Always love those
I was enjoying your presentation and analysis. I have a lot of vanilla pods and want suggestions for what to do with them. But at about 6:35 in, you got my full attention when you spoke the two magic ingredients, saffron and orange blossom. I’m a saffron lover and try to always it in my pantry. And I love having exotic flavors around to occasionally add to whatever sounds interesting. I am a very curious person, and it is apparent predominantly in two places: my pantry and my audio library. I mean, what could be better than knitting while listening to a riveting book and sipping on a fabulous cuppa Joe? (My idea of a riveting book includes science and speculative fiction, science, historical nonfiction, biography, and memoirs.) So while I wait for my coffee station to be set up, I’ll have a way to make your most intriguing coffee drink. Anyway, I AM FASCINATED BY FROZEN MILK! It’s something that I’ve never heard of before. I like the idea, the mouthfeel is what I would always choose. I just bought an inexpensive ($7.99USD) handheld battery-run (Amazon, two AAs) frother for my coffee. However, I don’t have any milk. So I checked at Amazon, and the only products that peaked my curiosity were a can of organic heavy coconut cream, NESCAFÉ Gold Espresso Intense (Instant Coffee, 3.5 oz.), and an empty bottle with a pouring spout. So they’ll be here tomorrow! I’ll have to wait 9+ days to get the frother, but until then I think I can pour the cream into a bottle with a screw top and either whisk, beat, or shake shake shake it up, right? Besides, I’m not doing the frozen thing with canned coconut milk.
This is gonna be interesting. As much as i love experimenting and drinking different and new flavours in coffee. The vanilla latte remains in my heart as the basic and comfort beverage of choice. Definately gonna try to up my vanilla game
Thank you so much!! I’ve been looking for more vanilla latte recipes and I’m happy to se that my favorite coffee youtube person made a video about them.
Have you tried adding coffee to your syrups ahead of time to make a coffee/flavor mix? Then you can travel with your coffee mixture and top with milk whenever you want a latte. Thinking of prepping some coffee before a week long vacation.
These are so cool! I do wish though that some time was spent talking about the coffee. Like where it's from, or what kind of origins go well with the drink, or even just how the espresso was pulled (ratios and such). Just a personal thought!

Morgan, I would love your opinion because how you focus on flavors so much. When making iced lattes, what order do you recommend? Syrup, ice, milk, shots OR syrup, shots, milk, then ice.
I love this I just wish I had the room for the stuff to make a GOOD coffee but hopefully someday I will have counter space to be an at home barista for myself and possibly my partner
a 2:1 ratio of sugar to water is effectively shelf-stable as the sugar will crystalize before it can grow mold if someone wants to make a larger batch. Unsure how adding in additional ingredients affects that though.
With spices and more non-volatile additions, there’s not really any change in its shelf stability. There’s a higher potential for things to go awry with infusions like fruit. But more often than not, you’re pretty safe with a 2:1 ratio!
Really like this video format Morgan, will be certainly trying to make the last one shortly, looks very good and I'm only missing a couple of bits. I'm surprised you make your syrup in such small batches though.
