Delicious Air Fryer Chicken Fajitas!

Ingredients serves 2 - 3 people.
2-3 Chicken Breasts
Tortillas
For the marinade
1 tbsp Smoked Paprika
1 tbsp Ground Coriander
1 tsp Ground Cumin
1 tsp Garlic Powder
1 tsp Chilli Powder or Cayenne Pepper
1 tsp Ground Oregano
4 tbsp olive oil
Juice of one lime
A pinch each of Salt & Pepper

Found this video yesterday and cooked them last night. As good as any I have had in a restaurant with a lot less mess than using a pan. The marinade was excellent - a little bit of a kick and none of the grit of a powder mix. The only change I made was to marinate the chicken on its own for 2 hours and then mixed through the peppers and onions just prior to cooking. I don’t know if this concentrates the mix on the chicken more effectively or not but this recipe is a keeper!
Going to try his recipe for bolognaise next and hope there is a slow cook chilli video at some point.
Hi there. Really glad this one worked out for you, this is a regular now for me, I won’t cook fajitas any other way now. As for you suggestion to just marinate the chicken without the veg then adding later, I think this is a really good idea and I’ll try this next time. Unfortunately I don’t have an air fryer, I have thought about it though, not sure it’s worth getting one for just 2 people. I’m undecided.
do it. food just tastes better in an airfryer and is quicker.

I'm the cook for 2 & wouldn't be without it, next week its also travelling with me for about 6 months & this recipe is top priority, I've made a jar of the marinade paste.
