When I got pork leg stew from the Cowboy Hat Lady in Chiang Mai the egg yolk was actually runny. I lucked out as others near me had hard boiled eggs. Mixing the yolk with the rice counteracted some of the sweetness.

That overdone egg is great when you dissolve the egg yoke inside the soup first .Gives it an extra richness , I do it when my mom makes Kai Palo noodle soup .
You're spoilt for choices in the old town, great to see you're showcasing local eateries other than the ones feature in the Michelin guide where most visitors flock to.

Cha om omelette is great, will have to try that noodle dish. Kao kluk kapi Is a favorite. Even got a restaurant in Sydney that does a respectable version.
