The diversity of the food you introduce us to is simply why I've kept watching your videos for years. You never get stale nor do you repeat the same 10 dishes over and over (unlike some other food vloggers).
Man, these dishes look simple enough when they hit the table, but watching the cooking process you can see just how much flavor & freshness goes into them. Beautiful! That stir-fried squid has to be packed with sublime tastes...
I admire Mark. He’s able to explore and learn but then his ability to explain it in such detail is amazing. Not only the surroundings and the history but the food. Things I honestly would never try, due to fear, he dives right in with chopsticks 🥢 and enjoys almost everything. I really envy people who can do that. As much as I love my Taiwanese food, Thai food is just hard to beat! I lived in Thailand for a year and never had a bad meal. Everything is packed with flavors. The only thing is that a lot of dishes are spicy so for people who are not used to it, it could be hellish to eat Thai food. I used to say that what's considered super spicy in Taiwan is only mild in Thailand. 😂
I agreed with you. My wife is a Taiwanese, so I have tried lots of fantastic local night-market Taiwanese food and love them. As you mentioned Thai food is hard to beat, especially if you're adventurous eaters. I would like to poit out one thing though, only about 30% of Thai food are spicy, the rest are mild or non spicy at all. Of course, being in Thai, people are tempted to add more of the hot stuff just for the kicks. ha ha
I’m Thai and I’ve been travel to Taiwan twice, to be honest the foods there a bit mild for my Thai taste bud. but delicious as the way it is. Really love the roti peanut cilantro ice-cream.

Went to Thai Town in Los Angeles today and had a beef soup very similar to yours. More of a boat noodle soup with tendon, liver, beef, meatballs, and tripe. Life changing, Mark.

larb, laab, laap....i dont care how its spelled its one of my favorite thai dishes for sure. extra extra spicy is the way to go with sticky rice as a chaser. not sure what region tom yum goong is from but another amazing soup that lives in my heart as a favorite dish. thanks for sharing.
