      Keto Connect what would you recommend for those of us who cannot do stevia? What should I sub in for those 8-10 drops you add to each part of this recipe? I have monkfruit/erythritol blend and allulose in my kitchen at the moment.

    Dough
    2 tbs softened Butter
    3 eggs
    3 tbs heavy cream
    1 tbs apple cider
    1cup 2 tbs almond flour
    1/3 cup coconut flour
    1/4 cup erythrotol
    3tbs golden flax meal
    Pinch salt
    1 tsp xanthan gum
    2 tsp baking powder
    3 tbs warm water
    Filling
    4 tbs butter room temp
    3 tbs erythritol granular
    2 tbs cinnamon
    8-10 drops liquid stevia
    Frosting
    2 tbs butter room temp
    1/4 cup cream cheese room temp
    2 tbs powdered erythritol
    8-10 drops stevia
    Pinch of salt
    2-4 tbs heavy cream
    1 tsp Vanilla essence

    I'll give you few tips. I make cinnamon rolls every week fir my job (the flour ones) after you make the filling put it in a microwave for few mins to soften the butter and will be easier to spread. And the other tip pour the topping while the cinnamon roll is still hot. It will melt and go through every corner of the rolls 🤗😋

      I could not agree more. But this was sad, the way she tries to make people believe that things will just spread and even out in the baking process. Thank you for pointing out a tip that would have made this at least maybe edible. I hope they listened.

    I made these but instead of using erythritol I used golden monkfruit, and instead of liquid stevia I used sugar free syrups!! One Hazelnut pump in the filling and one vanilla pump in the frosting. The most delicious treat ever!! My family loved them so much and agreed they tasted exactly like a Cinnabon. Thank you so much!!

    Never made such a beautiful pastry in my life!
    I removed all Stevia drops. I know you guys love them, but I really don't ,personally has a sickening aftertaste.
    I also read through and used one of the comment to use Psyllium Husk instead of the flax meal..
    That made the dough non sticky could work it with my hands and cut without any issues ,it didn't came sticky at all, like yours did, it worked really well.
    I also melted my butter in the filling which made it creamy and much easier to distribute.

    Meghan! Let me just say that I made these yesterday and they are probably THE BEST baked good I have made in a year on Keto & is just as good as "normal" cinnamon rolls. I was with happy to see them rise up in the pan & they literally looked just like Pilsbury Cinnabon rolls! I was so looking forward to my cup of coffee with a cinnamon roll this morning. You can 100% serve this to non-keto guests for breakfast over the holidays and nobody would notice the difference. THANK YOU SO MUCH! YES, it is very sticky & maybe a tad difficult to get into a rectangle, but just trust the recipe and they're perfect! Use dental floss to cut them before baking and they come out much prettier and see the nice swirl.😊

    Bingeing on regular Cinnamon Rolls are what put me on Keto in the first place! I am 72 y.o. female, T2 Diabetic and my bloodsugars got waaay out of control! That was 6 months ago. Today I am 60 lbs down with 40 to go and my B.S. is almost under control. I feel fantastic! I'm going to celebrate with this Cinnamon Roll recipe when I reach my goal!     I replaced a tablespoon of the flax meal with psyllium husk and the dough stayed together perfectly and didn’t stick to the everything as the first batch I made.

      @Samantha Lusignan Yes, the Phylium Husks is a great binding substitute as well. Though the xanthan gum helps it out a bit more.

    Just finished making these. Cannot wait to try them. The only thing I would recommend would be to spray the parchment paper also with oil. Mine stuck. I had to scrape it off and start over with sprayed parchment paper. Worked much better. Thank you guys so much! Your videos have been awesome for me. A year and 4 months in and down 100 lbs.

      I really liked them. They obviously aren't exactly like a regular sugar filled cinnamon roll, but very close! My husband loved them.

    when i used to make regulard cinnamon rolls,i used dental floss to cut the roll log,doesn't smoosh them as much,these look great,thanks!

    Thank you so much for this recipe, its absolutely delicious! The best "bread" like treat substitue ever! I made a batch of single ones using parchment paper muffin cups, (made 10) took them to work and they were a hit!!! I doubled the inside used swerve brown sugar and added chopped pecans, also doubled the cream cheese frosting and sprinkled toasted pecans on top. After I rolled it I put it in the fridge so I could cut them easily, put the frosting on when they were right out of the oven so it melted into the rolled layers. I had this for breakfast with my coffee every morning at work and it kept me without hunger pains for 6 hours! Highly recommend and very grateful!

    Man that looks so good!!! My only downside to keto cooking is just to make a recipe you need a crap ton of ingredients you dont have and when you buy em they cost almost 15-20 dollars each 🤭😏

      True. But once you have the basic ingredients on hand, they last quite a while. And you are eating whole foods instead of all the pre-made keto 'foods'.

      It's taken me a couple years to collect most of the "specialty" ingredients. Then, someone comes along and introduces another new ingredient you just Have to have! Keto cooking is expensive, but so much better for you! You just have to shop as you can afford to.

    For the resting, shape the dough into a flattened disc, wrap in plastic wrap, and put in the fridge. The chilled dough will be much easier to roll out and handle.

    Youre right! The best recipe! Eating them now. I didnt have flax seed, so I used powdered psyllium husk. The dough was not sticky and was smooth. Im saving this one. Thanks so much!

      although it's been 2 months, it's Christmas have fun. Just have it as a cheat day, and have some apple cider vinegar, lemon juice mixed in water. Keeps the bloating down and helps with digestion

    I made this recipe last night and I absolutely loved it. This recipe is definitely better than all the other fathead dough cinnamon roll recipes on the internet. I have made three different recipes and this one is definitely the best. Thank you Matt and Megha for experimenting and creating a good cinnamon roll recipe.

    We aren’t eating any sweets at the moment but we’re going to try this when we are! Except I will make double the filling, and put the roll in the freezer for 10 min before cutting it to maintain the shape - THEN I’ll make a double batch of frosting and pour half on while it’s hot and once it’s cooled!

    I love keto cinnamon rolls. The total keto app has a good recipe for it. I made them for my boyfriend and he loved them. You can also use pumpkin pie spice if you want a slightly different flavor.

    Definitely going to try. Hey what helps is if you mix the granular Erythritol with the cinnamon dry and melt the butter separate, then first brush the butter even on dough, then sprinkle the cinnamon mix over the dough evenly except the inch at end. You can even add crushed walnuts then roll it! Hope that helps.

    Mix: 2 T butter, soft. 3 room temperature eggs, 3 T. heavy cream, 1 T. apple cider vinegar. Whisk together. Add dry ingredients: 1 cup and 2 T almond flour, 1/3 c coconut flour, 1/4 cup erythritol, 3 T golden flax meal, pinch salt, 1 t xanthan gum, 2 teaspoons baking powder, 3 T warm water. Mix all together.Let rest while make filling. Filling: 4 T room temp butter, 3 T granular erythritol, 2 T cinnamon, 10 drops liquid stevia. Roll out into a rectangle between two sheets parchment paper to desired thinness. Remove top layer of parchment paper and spread filling. Leave 1 inch without filling to leave place to seal up. Roll up, using parchment paper to help roll. Oil a knife and cut into 9 rolls and place in 8 x 8 inch greased cake pan (round or square). 400F x 5 min, then reduce temperature to 350 F for about 20 minutes, until golden brown. For glaze: 2 T butter, 2 ounces cream cheese at room temperature. Wisk together. Add 2 T powdered erythritol. 10 drops liquid stevia. salt pinch. 1/2 t vanilla extract, 2-4 T heavy cream, depending on how thick you want it.. Let rolls cool completely before frosting.

    I made these right after watching this video because I got a craving so bad watching you eat it. I’ve been on keto for almost a month now and haven’t had a decent sweet treat in a long time.       Why 'not' make them again. There is nothing unhealthy in the ingredients. It is not empty white flour carbs and sugar.

      @@lesliea.fernandez6865 I had seen another keto recipe where they used instant yeast for flavor. You don't activate the yeast. I had bought Fleischmann's Instant Yeast. They come in small packages. I used 1 tsp, which did add that yeasty flavor but next time I make them I will do 2 tsp

    Few things, the dough was hard to work with but this recipe was so good!! I used swerve brown sugar for the filling in one version, my mom loved them! Then I made a more Paleo version using coconut sugar in the dough, and then I used pb instead of butter in the filling and added coconut sugar to that also. I also added some mini chocolate chips to that filling, just a few, those cinnamon buns are like a hyper amazing pb cup 👍
    Last night I used the dough recipe, minus the sweetener, as a dough for a cheese steak stromboli. It worked great!

    I didn't have hwc so i used 2tbsp of Greek yogurt. Dough was less sticky. Ans instead of rolling it out on parchment paper i used a silicone spatula to spread it onto a silicone mat. Saved paper and the paper doesn't get soggy!

    As a Celiac sufferer, many keto recipes are really nice to add to my repertoire. This one is very similar to a recipe I developed myself, except I didn't think to add the cream. Only thing I can't do is use erythritol, as it gives me the galloping two-step. I generally use stevia for everything. Can't wait to give it a try.

      chloe5susan yes they were great. My husband and kids like them too. My sweet tooth is strong right now so I missed the intense sweetness that I normally expect from icing but my body (and baby) was better off not having it :)

    Thanks for the ideas! Mine came out really interesting. I am only posting what I did wrong so you don’t do the same thing.
    I used a Kitchenaid stand mixer. I think that made the dough too fluffy/sticky and it stuck to the parchment paper so bad that I couldn’t roll it. I was able to save it by scraping the dough with the edge of a rubber spatula, dusting the ball with a bit more coconut flour, and oiling the exterior of the ball. This allowed me to roll it out.
    I would stick to a hand mixer as you did in the video. They don’t taste like a real cinnamon roll, but they are really good for keto!

    This is soooooo yummy. Even my husband who’s not keto liked it. I’ve add a tea spoon Instant yeast to the Warm water well for a couple minutes before adding it to the rest of the ingredients that I really do smell and taste

    I've been wondering how to make a poppyseed roll. This may be my answer!!

      Poppyseed filling:
      125g Poppy Seeds
      30g Erythritol powdered
      25g Butter unsalted
      60ml Almond milk unsweetened
      Grind the Poppyseeds and add the Erythritol , grind it again.
      Melt Butter in a pan, add the Almond milk, whisk, than add the Poppyseeds mixture and cook for 2-3 minutes!
      Spread it onto the dough and roll the dough!
      I've made them just yesterday and they are DELICIOUS 👍👍👍!

    I made these today....instead of 3 tsp I used 3 tbsp of apple cider vinegar....so yeah once I threw that batch away and started over again....they were great!!! I love this recipe!!!

    Xanthan gum also adds the chewiness in gluten free baked goods. I really like this recipe because it will be good for both me, and my celiac child

    If I may suggest for the filling, just butter the dough directly then sprinkle and press in (if necessary) the dry ingredients over the butter. That way, it's not clumpy and unevenly spread across the surface.

    Made these. The texture is amazing. You nailed it. Flavorwise, the icing makes it. They are surprisingly flat and one note when it comes to flavor, even cinnamon-wise. Theres just no depth of flavor to these (like most keto pastries) and the artificial sweeteners come through pretty hard. But wow did you nail the moist inside and crisp outside with this recipe

    I will try this recipe. I think I have everything on hand, and I'm hoping that the small amount of coconut flour will be little enough that I don't taste it. One thing that struck me is that I know a time saver that can make the filling application easier. My mom used to make cinnamon rolls once in a while, when I was a kid, and I've made them a few times as an adult. I wasn't taught to mix the filling ingredients together; and it does look hard to spread on the sheer dough. The way I learned was to spread the softened butter on the rolled out dough, leaving the same border you did. After that, just evenly sprinkle on the cinnamon and sweetener, before rolling it up. My mom used brown sugar in the filling, so I expect I'll use golden monk fruit sweetener.

    I made this recipe. The Cinnamon rolls came out delicious. I have a tip for you. I was going to make more filling , but instead , I put it in the microwave to melt a bit , and it was easier to cover the entire area . I then let it stand about 5 minutes to allow the butter to firm up before rolling. It worked out great! Thanks! For the recipe. 👍

    Chia seeds can be used to replace flax seeds in recipes. The lignans in flax can interfere with testosterone production. Also, people who are intolerant of xanthan gum can use ground psyllium husk.

    Hi. I tried these yesterday and they were great but a tad finicky to roll out etc. Plus I doubled the icing recipe as I like lots but my husband doesn't so I had a bunch left over. Thought about making more rolls but I'm a lazy-a$$ baker. So I invented keto cinnamon rolluffins. Made the dough but added more cream and water to make it wetter. Greased the muffins tins with filling mix, put on the dough, and spread more filling mix on top. They baked up nicely and with the icing on top were delicious. If there are any other lazy bakers out there, you might want to give these a shot.

    To cut slices from a roll without flattening them from the knife pressure, use a length of unwaxed dental floss, slide it under the roll, cross the ends over the top of the roll and pull outward in opposite directions. The string will slice evenly from the outside to the middle. Perfectly round rolls every time!

    Megha and Matt...!!! OMG, I finally found the time to try this recipe and I am blown away how great the buns came out. This is the best keto replacement recipe I have ever tried! I really have to hold onto myself to not rush and make a second batch, I bet this would not be such a great idea given that I am still working on my few lbs I gained over the winter months. But damn....my mouth waters just thinking of a new batch coming out of the oven. It is almost midnight in Germany but wow I am almost in the kitchen to get going hahahahaa.....!     Baking hack! Use unflavored floss to slice cinnamon rolls! Slide the floss underneath the dough to the size of the roll you want, then bring the ends up and pull them together like you’re going to tie a knot! It keeps the dough from getting squished and it’s so much faster! And the dough doesn’t stick like it does to the knife.

    You might want to add 1 tbsp of yeast in there not so much for the rising but for the flavor that is cinnamon roll has that yeasty flavor

    Instead of using a knife to cut the rolls, you can use a string tucked under the roll and tie it off like shoe lace to cut through the dough. It applies the pressure from all points and maintains the circular shape. Using a knife pinches the dough and can flatten it. These look delicious!

    Delicious. Made it this morning. Kids loved it. I am at 5300ft elevation. The dough was just a bit stickier than the video, I added a bit of psyllium husk and it turned out great. The altitude messes with baking here in colorado. Definitely use the oil technique. Will be making again and again. Thank you!! ❤❤

    My wife suggested that it might be easier with the filling if you melt the butter and spread it on the dough and then sprinkle the dry ingredients over the area to get an even spread.

    This may be your best work!! A thought.. When it comes to the filling. If you would of melted the butter and spread it onto the dough. Then Mix your cinnamon and such. Sprinkle that on the melted butter..you would of had the filling throughout, and much easier and better end result.. Thanks again ! Also I use this to make garlic bread filled with cheeses and garlic..so yummy
