    Is it safe to leach potatoes?

      Hi Lucinda! Leaching potatoes by soaking can remove some potassium, but the "gold-standard" for potassium reduction would be double-boiling potatoes. Put peeled, diced potatoes into a large pot of cold water and bring to boil. Boil for 10-15 minutes. Drain, rinse, add fresh cold water to the pot and bring potatoes to boil again for 10-15 mins.
