🗝️ Slow Cooker Thai Drunken Noodles
1 pound chicken breast, cubed or sliced
1 onion, halved and sliced
1 can (8 oz) whole baby corn, drained
1 red bell pepper, sliced
1 green bell pepper, sliced
1-3/4 cups sliced mushrooms
1/2 cup chicken broth
1/2 cup soy sauce
1/4 cup honey
4 garlic cloves, chopped
1/4 tsp ground ginger
8 oz rice noodles
1 cup fresh snow peas
Thinly sliced fresh basil
Lime wedges
Sriracha chili sauce (optional)
Place chicken, onion, corn, peppers and mushrooms in a large slow cooker. Whisk broth, soy sauce, honey, garlic, and ginger until blended; pour over top. Cook, covered, on low 5-6 hours or high for 3 hours (or until chicken is fully cooked). Cook pasta according to package directions. Drain and rinse under cold water. Stir noodles and peas into slow cooker; let stand 15 minutes. Garnish with basil. Serve with lime wedges. Top with Sriracha for heat, if desired.
🗝️ Healthy Blueberry Muffins
1 ¾ cups plus 1 tsp whole wheat flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
⅓ cup melted coconut oil
½ cup honey
2 eggs
1 cup plain Greek yogurt
2 tsp vanilla extract
1 cup blueberries
Preheat oven to 400 degrees F. Mix together whole wheat flour, baking powder, baking soda, and salt and set that aside. Then, in a stand mixer, mix together the wet ingredients. Once the wet ingredients are well-blended, mix in the dry ingredients. Take the blueberries and coat them in the extra 1 tsp whole wheat flour so they don’t sink to the bottom of the muffins and gently fold those in. Pour this into a greased muffin tin and bake for 20 minutes.

I saw that and thought the same! Our son is 8 and thankfully, he still comes and crashes on top of me for a hug or some soothing every time he needs it. I'm holding on to every precious minute! 🧡

I was told by someone working at a garden centre to soak orchid ( in the original plastic pot with batch chips) in water for 30 minutes then drain well and place back in decorative pot. I do that once a week. This way bark absorbs water and keeps roots moist.
I love your cozy and elegant living! I learned about the Danish art of living which is called Hygge. This is all about slow living and appreciating the moment. I love using our slow cooker any time of year, but especially in winter. I have a theory that many people are trying to fill up their lives with busyness, but what most people are craving is belonging and coziness. My favorite season is winter because I have a few warm pajamas (though I admit I need some prettier ones), a fireplace and hot teas to enjoy with my husband and little Shit-Zu, Lucy. I know I need to incorporate more of these things you've mentioned as you've inspired me with your own cozy and elegant homemaking. I've tried to get ideas from other youtubers about homemaking, but unfortunately many are critical and use shaming tactics, which I think is inappropriate. Your approach is so pleasant. It's like you are a friend inviting us into your home and sharing things you have learned with us. You are such a blessing to us!

I love keeping orchids and I love how they bloom in the dreariest part of winter! Mine finally outgrew their pots so I had to learn how to trim the roots and repot them--a little indimidating but they did great! They are the perfect low maintenance houseplant!

For all you do for us, here is a "gift" for you...when measuring honey, spray the measuring utensils with a light oil. I use olive oil. The honey slides out easily without mess. Thank you for such a wonderful video!

The muffins are delicious! I am gluten free. I used Cup 4 Cup GF flour. I took out 1 T of flour and replaced it with Flax Seed Meal. I also let the batter rest 30 min. and added 3 min to the bake time. They are some of the best GF muffins I have ever made. 😊 Thank you for the recipe.

Lovely video, Jennifer. Your youngest son is getting so big!!! I've been watching your channel since before you had your oldest son. I too love orchids. Two years ago I gave away all but two orchids - I had about 20!! Just too many to properly care for - I was glad for them to have new homes. At the moment the two that I have are just coming into bloom - I'm going to have many blooms this time. I use the same fertilizer that you do. For many years I kept my orchids in the pots they came in too but the two I have now I've transferred into terracotta pots made especially for orchids - purchased at my local Lowes store and they have worked beautifully and look nice too. Thanks for continuing to produce such beautiful videos.

You would probably get even better results if you mixed your muffins by hand. Muffins should barely be mixed, just until combined so they’re fluffier instead of dense. Have a great day!

I’ve recently started setting aside time on Saturdays to tend to all my indoor plants and it’s been amazing. Thank you also for sharing about your orchid routine! I almost gave up on my orchids but I repotted one that I had in orchid bark and gave it some time in a good location, not overwatering and I got another bloom on her! This video was so perfect! From the baking to tips on winter gardening. It felt really cozy especially because my tundric winters are probably colder than yours, but the ideas supplemented my daily routine and gave me a better outlook. I love these at-home videos. Thanks for sharing, Jennifer! I recently purchased the Brooklinen luxe bundle in cream and was shocked after washing the duvet cover as instructed that a small hole developed. Something you would expect after multiple years of use. Based on the quality of the duvet, I returned the entire set. If you search their reviews by 1 star, you will see others experienced the same. I was really hoping I would like them but unfortunately I was a part of the small percentage who had an issue. Hopefully others don't experience this.
For a better dish, try trimming the snow peas and give it a quick blanche before putting it into the pot. Great quick one pot dinner. Thanks for recommending! 👍
So grateful to learn about regrowing orchids and I immediately ordered the orchid plant spray. I'm one of those who used to throw away my orchids when the blooms went away. I know, not a good thing. You've given me the skills and tools to regrow my orchids I buy from Trader Joe's. I looked back at two of your other earlier orchid videos for additional tips. Fortunately, I have the watering and lighting down! I do wonder if the orchid in my bathroom, which seems to thrive, needs a nice dose of sunshine once in a while. Something I want to share, not to be an alarmist, but just to make you aware. I read recently that the kitchen aid mixer attachments with the enamel coating may contain lead. Whether or not it’s possible for it to leach into food, I’m not sure; but my attachments were chipping (revealing the bare metal), which caused me some concern. There are stainless steel or even plastic replacement options. Just wanted to share this.❤ Keep these delicious recipes coming😉

Hi Jennifer, I love those white linen sheets. I was just wondering though...how do you keep them white without it getting yellowish/offwhite after a while from stains? My husband is a tradie and even after showering every night my light linens never seem to look well after a while😔

Different flours absorb different amounts of liquids. I would look up an almond flour muffin recipe. Almond flour make’s delicious muffins.
