Fast Easy Sheet Pan Meals for Lunch or Dinner

- Sausage, Onion and Pepper Bake
3 peppers - mixed colors if you can
1 medium red onion
1 package precooked sausage - I am using double smoked
2 cloves of garlic minced
2 to 3 TBSPS of olive oil
Salt & Pepper
1 TBSP garlic powder
French bread or any bread you like for toast
Parmesan cheese to sprinkle over the top - this is optional
Clean and slice all of the peppers, the onion and the sausage and place them all on the sheet tray. Sprinkle with salt and pepper and 1 tbsp of garlic. Pour on the olive oil and massage everything with your hands until the ingredients are well coated. Put into a preheated 425-degree oven for 35 minutes, stirring half way. We serve this on toast but you could serve this as dinner with rice on the side.
Chicken Thigh and Sweet Potato Bake
6 bone-in ski on chicken thighs
1 large sweet potato peeled and diced into ½ inch to 1 inch dice
About 14 bussell sprouts cleaned and halved
½ pint cherry tomatoes
1 large red onion sliced
For the glaze:
1 TBSP each of Dijon mustard, olive oil and honey. Mix well together and spoon over the chicken.
Place into a preheated 425-degree oven for 30-35 minutes and then remove from the oven. Take the chicken out and stir the veggies. Place the chicken back on. If the chicken looks like its getting to brown add a sheet of foil over the dish before you put it back into the oven. Cook an additional 10 minutes.

As an 80 y year old I don't have the strength that I enjoyed in the past but I enjoy cooking from scratch still.

I love baked sweet potatoes, I’m not a fan of Brussel sprouts but I like everything else I always forget sheet pan meals I could add broccoli or asparagus in place of Brussel sprouts

Thank you Colleen, both of these meals look delicious. I’m 74, so I definitely love meals like this It’s just my husband and me to cook for now. We were blessed with four children and my Mother lived with us for over thirty years, so I was used to cooking big meals. Now we get severL meals out of one dish, but my husband of Fifty five years never complains about leftovers, and I’m thankful. I also love your videos using the bread machine. Yum! My son showed me about Brussels Sprouts but he cut his in half to decrease cooking time. He put it all in a bowl & olive oil mixed with his hands & they were absolutely delicious! I’m going to try your recipes

@@oursilvermoments6028 I was thinking the same- as in, it's nice to see a wife take care of her husband but also a husband take care of his wife. True that many woman also work. What I have learned to do is make more of whatever I'm cooking so there are leftovers for lunch next day for hubby and me. My husband does the same when he cooks.

Mmm….I think I would substitute asparagus for Brussel sprouts as well. What else can I use for glaze.? We aren’t fond of mustard. Brown sugar, honey, OJ? I would love to see more sheet pan recipes. Thanks Colleen! Love your videos.

Hello Becky, I am sorry to hear about the smoke reaching you guys all the in Ohio. We have had smoke off and on all spring so far but we are grateful that it is blowing in from far away rather than having a fire in our own area. The recipes are good and fast, my favorite kind! 🥰

Yes the smoke is back again today , the news keeps telling us to stay inside if possible because of bad air quality especially those with respiratory problems!! The smoke just hangs over and around us snd makes the air have that grey Smokey color and smells like burnt plastic!! Thsnk you Colleen for sharing your wonderful recipes with us and for showing us your canning videos when you do them ! Didn’t you pickle some eggs last year ?? Looks tasty and love easy! Question about the farmers sausage though. Is it like a kiobasa type where it’s smoked? Sort of looks like it but thought I’d ask. I’m in the US and can’t say I’ve heard of farmers sausage before now. Thanks for your yummy videos Colleen❤
