MEXICAN STYLE BEEF AND RICE SKILLET OREO COOKIE DUMP CAKE

- Oreo Cookie Dump Cake
1 package of Devil’s Food supermoist cake mix
1 8 oz tub of whipped topping
1 14 oz can sweetened condensed milk
24 oreo cookies
¾ pound butter cut into little squares
In the bottom of a 9 X 13 inch baking dish arrange the oreo cookies in the bottom of the pan. Open the condensed milk and pour over top of the cookies. Dollop the whipping topping over the ingredients in the pan and level out. Sprinkle the dry cake mix over the whipped topping leveling it out as well. Cover the whole top with the small squares of butter. Bake in a 350 degree oven for 45 minutes.
Mexican Style Beef & Rice Skillet Dinner
1# of ground beef
1 small onion chopped
1 small green pepper diced
1 TBSP tomato paste
1 package of Taco seasoning
1 to 2 teaspoons of minced ginger
1 cup of frozen corn
2 cups of beef stock
1 can diced tomatoes
1 cup long grain rice
1 ½ to 2 cups shredded cheese
In your skillet start by adding the onions and green pepper and cook two to three minutes before adding the ground beef. Cook until just about all the pink is gone and then add the tomato paste, garlic, and Taco seasoning and stir well. Then add the canned tomatoes and beef stock. Add the long-grain rice, stirring it well to make sure all of the rice is under the beef stock. Put the lid on and cook for 20 to 25 minutes on low until the rice is cooked. Ensure you are stirring the skillet every 3 or 4 minutes to keep the rice from sticking to the bottom of the pan. Add 2 cups of cheese of your choice and put the lid back on and allow to sit with the temperature off for 5 minutes before serving.

I can hear you fine. One thing I would like to offer is what I do to be able to eat corn. Gotta have my corn being from Indiana🤭. It adds a nice sweetness to the recipe. I’ve had colon cancer so digesting corn is very difficult with only a third of my colon left especially. I pour frozen corn into my food processor and the corn is chopped up enough to help digestion. Be sure to process long enough to chop up each kernel. Keep it in a frozen state. I pour it into a freezer container and just pour out as much as I want each time. Also I believe the corn tastes better more like you just cut it off of the cob.

July 24,24. Just made this today ,it was delicious. I added the ginger garlic and Worcestershire sauce and a 796 ml can of diced tomatoes (because that’s what I had). Next time I’m tempted to add black beans also. Thank you for the recipe.
PLEASE continue to do your cooking as you are….I am not a fan of voice over videos 😢. As a gma, I’ve learned how to tune out inconsequential noise, as I’m sure most have as well, and as you say, it is cooking 😊

Thank you for ALL of your videos. I learned from you, to use a bread machine for more than making bread IN the machine. What a wonderful tip this has been. I use it for kneading, since I'm arthritic and need help with that "chore." I used to love doing everything
by hand, but I am unable to do that when I want to.
I will be making this beef and rice recipe. In our family, there are gut issues as well. Corn and peas can cause the same sort of problems. (Our family IBS, Diverticulitis.) I might suggest to you to use fresh zucchini (courgettes...in Canada?). Cut them into thin half moons, about 2mm thick (roughly 1/8 inch) and put them into your skillet about 5 minutes before everything else is finished. I do this with zucchini in the microwave, no paper towels needed, and when cut this small, you can put it on the plate(s) and reheat the rest of the meal and the squash will be perfectly done, no excessive water leaking out.

Absolutely delicious. I shall be trying this as well. Glad to hear you use Worcestershire sauce with your dishes at times. I love that, I use it also in pot roast, meat loaf, baked beans with bacon and sausage added. Often, I will substitute it with A-1 on cuts of dinner meat. I love the snap/tang it puts to the meat. I shall be trying this dish as well. Looks so wonderful and we love that type of meal. I love the looks of the dump cake as well. My gang will love it. Having to watch sugar, so I would take a bite and wish I could have a whole serving. LOL I know the kids and grands and great grands will enjoy it as well.

Loving the recipes and although my husband and I are “new seniors”, (coming from a large family myself) I tend to make bulk recipes and freeze them for two., it makes it easier for me as well as more affordable. My husband came into the room to find out what that noise was 😂. I have a plugged ear, the ac & fan are on so I turned it all the way up to hear you. 😂. He had never noticed the skillet cooking before but we have a confluence of circumstances and he was afraid that something was wrong. 😂

Going to be trying that dump cake for sure, the skillet meal I do one almost the same, about the corn I’m diabetic and can’t have corn because it breaks down into pure sugar, there isn’t really any nutritional value to corn but it sure tastes good lol, about the noise it doesn’t bother me but if you perhaps wore ear buds or something with microphone built in, my air pods are noise cancelling so your voice would be clear with just a bit of the cooking sounds in background I think problem is your microphone is picking up your voice as a secondary sound you seem to be doing much better looking a bit more rested take care of you

You can buy butter that is not in sticks? I'm jealous 😂. This is similar to my cheat peach cobbler. Namely the cake mix and butter.

What brand is your can opener ? It looks easy to turn.
Can we use the can whipped cream?? We do not have the kind you are using where I live.
Is there a printable recipe I can get? The hamburger and gravy blew me away. You added the flour to the meat mixture before your liquid. No lumps!!
Colleen, you might want to check out fellow TH-camr Rocky Kanaka " Sitting with Dogs". He films at a dog shelter and has figured out a way to mute the background barking and focus on his voice. He seems like a sweet guy who might help you. Also, good for you keeping busy while you work through your grief. It helps.

It's a filter he uses...I love ROCKY Kanaka's Sitting with Dogs! I don't know anything about filters, if it's a phone or camera thing, etc. I just remember he said before he uses a filter.

I love 💕 your videos. Been doing composing prices in different areas of the USA. So how much does it cost for one pound of ground beef 🥩?
@barbarawatson2806 it's right around $6.50 a pound.
We can buy Amish butter in a one pound log but it is more expensive but has better flavor.
The way some people fix the cooking noises is by using a mic they can wear that way they can isolate the voice on the video. But that sounds like a lot of time and work and it's just like being in a kitchen with all the food noises.
I'm making this now and noticed you wrote minced ginger when you meant minced garlic.
