Some of the other recipes I had found involved Atta flour (Indian wholemeal flour) which I wondered if it might make it a tougher/grainier cookie. I will be making these today~! Thank you~! I love the stamp idea. TY. They look so easy. I'll have to give it a go in my toaster/convection oven. I've see folks eat them on UK tv shows so now I cant try them too.
The first batch I made as per recipe but second batch I ran out of icing sugar I had to use granulated sugar and I rolled them thinner and made 20 biscuits, they were lovely.
These are known as Grandpa Biscuits by my Girls ..as he always had them in the house ..I used to make Gluten free ones for him when he became a coeliac in his 90’s ..thank you for reminding me , I shall make some for my Girls x

Have to admit I had to stop buying the caramel chocolate digestives, they're too good and your recipe is making me think I could make an even better one...
Sounds lovely, do it and comment any learning curves you encounter. I imagine the caramel would need to be quite thick, I always dislike that about the McVities ones but they are lovely. Cheryl may even try it out
I tend to use the same flour that I used for the recipe...in this case, wholemeal flour 🙂 I don't know that it makes much of a difference...but I tend to keep it the same 🥰
I always thought digestives contained oats, clearly I’m wrong 😅 to bad I’m gluten intolerant so wheat isn’t an option for me… I wonder if I could use oat flour instead? If anyone can help me out here, pls respond to my comment! It will be hugely appreciated ❤ they do look very delicious, luckily watching a recipe video with regular wheat flour doesn’t make me feel ill and I can still enjoy gluten containing biscuits that way - I know it’s not the same but still 😂 I also adore the Scottish accent! I fell in love with the accent and landscape after watching Outlander… me and my dad watched together and ever since he calls me “wee lass” and I lovingly call him Da, even though English isn’t even our native language ; we’re just so in love with Scotland, it’s history, it’s nature and the cuisine! Hopefully one day we’ll be able to go on a Da-Daughter trip to the Highlands and try an authentic Cullen Skink & Haggis 🤭

Absolutely Mark 🙂 but these can be quite difficult to find outside the UK...and if you can, can be quite expensive. I think they're quite fun to make, and you get a lot more satisfaction from making them yourself than you do from picking them up from the supermarket...well I think so anyway 😁

The McVities Digestives contain palm oil (not butter) which, even if they claim it is from responsible sources, contributes to deforestation. If you make them yourself you know exactly what’s in them.

When you flour your surface do you use all purpose or more of the whole wheat flour? I am in the US and I love digestive biscuits!!!
I tend to use the same flour that I used for the recipe...in this case, wholemeal flour 🙂 I don't know that it makes much of a difference...but I tend to keep it the same 🥰
