I tried again, same result! Turns out, they're really good make-ahead cookies-- because after 2-3 days in the cookie jar, they were perfect! I was so confused-- but thrilled-- nobody ever mentioned that part. From other videos, etc. I don't think that's how it's supposed to work, but whatever works-- and make-ahead recipes are my favorite kind! Stay happy, healthy and safe!😊
Delicious! I used only 1/3 of the ingredients and didn't have a mixer nor did I refrigerate the cookie dough because I was impatient, and they still are fantastic! I was just craving a cookie and had none in the house. :)

My mother used to roll out the dough and cut is shapes. Can only roll the dough our 3 times before it gets too tough though, so pick your shape and cut wisely. A cookie press can be used too, but not straight from the fridge, needs to warm up a bit.

I've made shortbread cookies for decades---what these actually are---and have never bothered with the slicing method. I pat the dough out into a pan, score it into whatever shape(s) I want, and bake them. Much easier, doesn't require refrigeration, and minimal effort. I also have spinal arthritis, so can't stand for very long, and have had to learn to make things work without all the unnecessary steps.
I'm going to make them as a bar cookie - I don't have the patience to make cookies any more. Using it as a crust for cheesecake (from a poster below) sounds lucious.

Made these today following the recipe & steps exactly. Cut the dough pretty close to 1/2 inch thick. Thinking that might be too much, the vid looks like 1/4 or 5/16ths maybe. Mine came out super dry, like suck all the moisture out of you right now, dry and didn’t seem to be just a touch under baked in the centers. Good easy recipe tho! Gonna revisit this one.
My Scottish mom’s recipe was also just butter, sugar and flour….but used brown sugar instead of icing sugar. Lovely flavour. And a bit of maraschino cherry in the middle of some.

I hope there are no lumps in your mashed potatoes. Want to get them smooth and fluffy? First, NO GARLIC (yuck), second butter and milk, third use an electric hand mixer and mix them AFTER you mashed them first by hand with a hand masher.
This is classic shortbread it is also the very same recipe as butter balls which also have very finely chopped nuts includdd in the recipe- then rolled in more powder sugar while warm- one of my favorite Xmas cookies/ been making them since the 60’s
It's like shortbread. I love adding vanilla or almond extract. I put a little sliver of almond or a red or green piece of candied fruit, red or green for X-mas on top so we know the difference.

With an extra cup of flour the channel version is the recipe for shortbreads, only no chilling and 300 degrees. As given , they are traditional ice box cookies. Shortbreads usually taste better after storing in an airtight container for a few days.

Scottish Short Bread is made the same way. I love them no need for Vanilla Extract. Cup of real Earl Gray with the Cookies and I am in Heaven.

I think the main difference is powdered sugar is just sugar that's powdered but icing sugar has a bit of cornflour added to it for thickness.
