My daddy used to eat this too! You're giving my secret hashbrown potato flash recipe away! Lol. I bought them in a bag once and at the same time I thought, what's in this bag? Nothing but par-cooked potatoes. Well, I can do that! And, I leave on my potato skin. I think it's pretty. I cook them in a little shallow water 1st and when they're almost 99% tender, I pour off any water add some butter and brown them off in that dry pan. It works! We have a lot more potatoes! I add onion and green or red pepper or some chili spices and cheese. Happy ~ Happy ~ Happy ; )

Corned beef hash in a can was my thing when I was little. I would visit my grandmother and when we walked to the grocery store in town, I would always ask for it. It’s like a comfort food now because I associate having it with my gram ❤️

I grew up with homemade corned beef hash. I even remember Mom making sandwiches with leftovers for school lunch. It would fall out of the bread but ate every bit of it. Never had it with eggs until I got married and my husband asked for it that way. We never did eat it for breakfast but we always ate it with rice and my mom would take half the corned beef hash and add water in a pan add more seasoning of salt and pepper to make a “soup” that we would pour over the rice. I loved it.
My Dad was also a hash lover but we usually browned up the canned stuff in an iron skillet and broked eggs over the top and then semi-poached/steamed them in little wells in the hash. Yummy. Definitely going to try your recipe this Sunday for a doubly blessed day! Love your cookin'.

My Mama’s corned beef hash was more of a soup, but that could have been because she was stretching it to feed 7 people on about $25 a week for groceries in the 60’s. I love corned beef hash the way my Mama made it with lots of pepper, but Gina, yours look so good. Yum!

My memories of corned beef hash, is the canned corned beef hash. I would add ketchup and black pepper to mine, let it brown and then fry up an egg. Nowadays, I add Sriracha to it--yummy😋🙂. I am going to try the fresh recipe one day🙂.
