My first shot at hibachi steak and shrimp today. I followed your lead except we don't eat broccoli or peas. Also, I put my shrimp on later than you did to make sure I didn't overcook them. It turned out great! Your flattop videos are the best.

I cooked professionally on a flat top for years. I missed it so much that last week I bought the 22” because it’s only my husband and I. The size is just right but the heating is off. Even on low, the flat top stays at around 460-470 and the middle is the hottest. It’s going to take a while to get used to using this. I am now kind of kicking myself for not researching more. Lesson learned. Thanks for sharing all your tips and tricks. I agree with your wife, that’s a lot of food for two people. Leftovers for a week. Lol looks great.

I am just a behind on the flattop, so walking through Sam's club there was one for less than $400, I couldn't let it go by. Great video as usual, and the results look amazing. Old video but the same basic principle as a wok, especially on my blackstone because of the center hot spot. A lot of cooks will not use refrigerated rice. They also mix a short grain rice with a long grain jasmine rice. Rinse the rice until it runs clear being careful to do this quickly so the rice doesn't absorb too much water. Add less water than on the directions. Cook the rice, let it cool some then lightly oil it to help keep the grains separated, you can actually get by without this step. A lot of Asian chefs say to never cook cold rice. I used to cook it cold and it will work, but it's much better to cook it room temp.

I find it curious that our culture has misinterpreted this style of cooking. Hibachi is for all intensive purposes a BBQ or grilling, where as cooking on a griddle is teppanyaki style of cooking. For imitating a culture derived from tradition, and our culture from rebellion, I guess it's no wonder why we do this. I have to say though, whether you call it Hibachi or Teppanyaki, y'all have created a great channel and thank you for sharing your recipes. We are so grateful for helping us with our cooking. God Bless!

Hi, I‘m writing you from Germany. You are doing a great job! As the griddle grills are not so common here you do not have the amount of dealers selling them. I’m very interested in the Blackstone 36” as this is one i can oder in Europe. My concerns are if the griddle will rust if i use it one or two time a month. Can i avoid this by putting on oil after using it and the silicone mat? I don’t want to spend more time in maintaining instead of using it. And the pit boss with the ceramic coat is not an option to me… your opinion would be very helpful! Thank you

If i can be completely honest. Food to me is what or how You make it. Inspiration comes from exactly what you just did. Watch and learn or deicide what you like and dont like. In the last version did add some and it went well. That was chicken fried rice on the pitboss , i have a shrimp fried rice and split into two videos i have a fried rice video and a teriyaki chicken. Big difference between best griddles like Camp Chef and Blackstone is the reinforcing plates and bars welded to underside of the griddle. Look under the griddle! Nothing under the one you can buy from Sam’s Club, etc… Most will tell you that the bars are for heating evenness, my opinion is that this is the main reason they don’t warp so easily.
