Blackened Salmon and Shrimp in a Cajun Cream Sauce was cook on my camp chef griddle and served over top of the best dang cheesy jalapeno grit cakes you've ever had.
No matter what brand of griddle you have, Camp Chef or the Blackstone griddle this recipe will rock on.
Sounds complicated, but this cajun inspired blackened fish recipe is actually very simple to make right on your flat top grill. Make cheese grits the night before and refrigerate them, then whip up a simple cajun cream sauce, season your fish and shrimp with your favorite blackened seasoning and you're well on the way to a restaurant-quality dinner at home!

Update - 12/25/2020: First off, Merry Christmas to you and the family. As I had mentioned we cooked this dish tonight for our Christmas dinner and it was absolutely fantastic. I believe it is my wife's new favorite meal. She said, this could be served in a fancy restaurant. It was absolutely delicious and certainly one we will cook again. I'm so glad I'm looking back through the old vids! This one is priceless. And that dish is extraordinary (I had a similar issue with blackening and was moved outside for all further attempts). But, ya got to eat the salmon skin!
