Hello from New Zealand I have just discovered your channel after a friend visited your country and said the food, hospitality, and scenery was amazing so I looked up some recipes and found your channel just the kind of food I love to eat especially the herbs. Please tell me do you use the walnuts fresh or do you roast them as we do mostly in cooking. I have bought my ingredients and ready to start tomorrow. Frying is a nightmare! I tried to fry 800g of eggplant and I had blue cloud of oil in kitchen. Now kitchen smells, pan needs scraping, but eggplants taste great :D
Pomegranate seeds should be put a little (3-4 pieces) inside, and not on top. It must be a surprise🥴 And they have to be ripe, so dark red. And you must use a mortar and pestle to crush nuts into a paste without the water so it turns yellowish and oily.

Bake them in the oven then. I fry the eggplants without any problem.
