Easy Cinnamon Raisin Bread | Georgian Nazuki

  • Learn how to make a homemade dense, sweet and hearty cinnamon-flavored raisin bread from the country of Georgia. It is especially delicious when served hot right from the oven. The flavors of cinnamon, vanilla, and cloves resonate in this sweet desert bread, which is slightly similar to American raisin bread, yet sweeter in taste.
    Shaped traditionally as crescent, nasuki is brushed with an egg wash before being baked in a tone, or clay oven. Nazuki can also be baked in a conventional oven, and that is the recipe I offer. Georgians eat it without anything, but if you spread it with a little bit of honey or maple syrup, it will sweeten it even more and make it a truly desert dish. Double the recipe if you wish
    Ingredients for Nazuki
    Makes 2 breads Nazuki
    1/2 cup/70g raisins
    ¾ cup/180ml warm milk or water
    1 packet active dry yeast (7g) or 0.6 oz/17g fresh yeast
    1/2 cup/120g plus 1 teaspoon sugar
    2 large eggs, at room temperature, separated,
    2 ½ cups/425g sifted all-purpose flour, plus more for dusting and kneading
    1/2 teaspoon salt
    2 tablespoons vegetable oil
    1/2 stick (4 tablespoons)/55g unsalted butter, melted and cooled
    ½ heaped teaspoon ground cinnamon, more to taste
    ¼ teaspoon ground cloves
    ½ teaspoon vanilla extract
    Egg wash: 1 egg yolk beaten with 2 teaspoons water
