  • Today I am cooking at home and making moo goo gai pan, which is a popular Chinese takeout chicken and mushroom stir fry. This is great with steamed rice for a simple but very delicious meal.

    INGREDIENTS
    1 lb (454 g) chicken breast (boneless and skinless)
    2 Tbsp (30 ml) water
    1 Tbsp (15 ml) Shaoxing cooking wine

    1/4 tsp onion powder
    1/4 tsp white pepper
    2 Tbsp (15 g) cornstarch
    4 oz (113.5 g) Shitake mushrooms (or mushrooms of choice)
    4 oz (113.5 g) snow peas
    1 medium carrot
    1/2 medium onion
    2 scallion whites
    2 cloves garlic
    1/2 tsp ginger paste
    cooking oil for stir fry
    Finish stir fry with 1 to 2 tsp sesame oil

    3/4 cup (177 ml) water (cold)
    1 Tbsp (15 ml) Shaoxing cooking wine

    I made this today and it was great! Best Moo Goo I've made. I did add a bit of water chestnuts, bean sprouts and little bit of soy sauce. Good stuff.

      Bean sprouts are wonderful and they belong in Moo Goo Gai Pan. If you have the time, try picking the heads off of them before you cook them. I cheat and keep canned LaHoy bean sprouts on hand. They don't turn into science experiments. And when I open the can, I rinse them out in fresh cord water to help get rid of the can taste.

    I love love love your chicken with green beans stir fry and change out the veggies. It is THE BEST. I've made it with zucchini, zucchini and mushrooms, broccoli, broccoli and carrots. Thanks for another great one Mamá.

    Throw your chicken in the freezer about 1 hour before cutting, this will firm it up and make slicing much easier and safer.

    This sauce looks like a sauce they use to use in a dish called Shrimp sub gum back in the day. It also had water chestnuts and cashews. It was delicious!

    Thanks for the video. I didn’t even know what Moo Goo Gai Pan was till now 😆 it was just one of those stereotypical Chinese dishes mentioned a lot like chop suey. This dish looks amazing even tho I’m not a fan of mushrooms (maybe another reason I over looked this dish) When my cat had surgery and needed a cone she wasn’t having it so i heard a paper plate is a good temp fix that lets them eat better so when i put that on my cat a friend called her Moo Goo Gai Kitty (yah sounds bad 😞)

    I wonder how many other people this was their go to dish when you went out to eat. I loved it. You'd is a little different than I have been using but think the order that you did it would work better for me. I always end up over cooking the veggies for everyone but me. Thank you. I planned on a chicken stir fry tomorrow and this is the winner!

    I’m definitely going to try this. I love this dish from a Chinese restaurant so this looks just like what I get. I have all ingredients except the bullion powder and mushrooms so have to make a trip to the store! Thanks for the recipe!

      You can exclude it or use the white cooking wine you have. Saké works as well. 😊

    Nobody mentioned the white pepper. Black pepper is not a substitute for the white pepper as they both have a very different quality of peppery heat. Also, adding a couple of drops of sesame oil adds another dimension.

    This looks great. Kindly advise what non alcoholic substitute can be use for the shaoxing wine in this recipe? Thank you

      If the heat reaches about 170 degrees F, it will burn off the alcohol. Also note the amount of wine you are using, 1Tablespoon so the amount of alcohol is very small. This is a very small amount. Also, Sherry can be substituted for the wine. Lastly, this is such a small amount, you can just omit it.

    I use ground ginger...What is ratio of ground ginger Vs. ginger paste?

      Ginger paste has a stronger and more life like character. I would suggest going by taste. Start with the ginger and get the ginger up to where it is noticeable to you. Then start adding the garlic. Maybe balance it, so the ginger is three times as strong as the garlic. And remember that the flavors will strengthen, intensify, and blend together during cooking.
