I was in the Air Force in Greece for almost 3 years back in the 1960s. The souvlaki I used to have and enjoy, was from a little wheeled cart. They were cut much smaller that those made here. The skewers were about 8 inches long. The key is that they are grilled over charcoal. Do not use a gas grill. The souvlaki was then put on to a 6 inch grilled pitta with chopped onlion and tomatoes and a sprinkle of salt. Then cam the magic, when the olive oil and lemon was put right on the prepared souvlaki.. Delicious! I lived on those things.
I remember the small place I used to eat at in Glyfada back in the middle 70's called Mackies.....He would serve mine with Tzatziki and pita....I could eat those all day long...........I just loved them....

My father would bring home what I felt like was a ton on the sticks, and he liked what we called Souvlaki pancakes (on Pita Bread). We ate that food like there was no tomorrow. That was back in 1980-1983. Man what great memories and culture. I loved Easter and the cracking of the eggs.
I made this a couple of days ago. Followed the recipe to a T. It was so good I was eating them out of the refrigerator cold. Will definitely make them again. DELICIOUS AND EASY!!! THANKS!
Loved your video. Having been a butcher in my youth, I can tell you this, wood cutting boards are fine as long as they are cleaned well. As for marinating, Not more than an hour or so in the lemon juice, the acid in the juice will start to cook the meat ending up making it tougher.
Ken this takes me back to when I was a kid, hoildays in Ithaca where my from my dad comes from, the smell I'd awesome, i use fillet but every one's is different,, enjoy
In '76 I was staying with friends in Voula and went to Glayfada almost daily. There was a little open. air market and that's where I had Souvlaki for the first time and I love it. In one of the restaurants I used to go to I was mesmerised by the whole chickens roasting on a rotating spit in a glass oven and the aroma of lemon & herbs was amazing - we had nothing like that at home. i lived in Montreal back in the mid-seventies, there was a Greek souvlaki place called The Golden Corner or in French Au Coin Dore, they had the BEST juiciest, most flavorful souvlakis in the world!

I live in Utah in a small town , so when I want Greek food I need to drive 25 minutes to the next town, they have a wonderful food we love it, by the way the name of the restaurant is Greek street, so good, but now with this pandemic they closed and being a small business place I don’t know if they ever will open again 😕 so if I want great Greek food I better learn how to make it 😁

I live in Rodos and a little trick I got from the oldest souvlaki place on the island is to mix a little bit of cumin in the oregano to sprinkle on top... it might not be authentic, but its absolutely delicious! :D

When I was starioned in Germany in the 80s, we used to travel to Chania, Crete for live fire exercises. I have been looking for a souvlaki recipe that is comparable to what we used to get from the street vendors. I'm gonna try this recipe first chance I get and make a gyro that is as close to what I remember from those days.

I was in Athens last year. All the veggies tasted so much better than here in the US. Had Pork Souvlaki most days while there. It is so good. Try with the Greek Village salad. Hint, if you can find it get Greek imported Feta instead of domestic. You won't regret it. I like Dodoni.

Seeing you smell the smoke reminds me of the old chef at his pita restaurant in Retymno (Crete) he took pride making his pitas and they also tasted like that For 22 years each summer that’s all I rate when going out for a walk I miss the smells a lot even when they make their own wood charcoal
Bravo agori mou, I like to cube it small but I like to pick every other cube with a nice layer of fat. When that fat melts and grills that just adds another layer of flavor to the souvlaki. I also add orange juice to my marinade..

I was in Athens last year. All the veggies tasted so much better than here in the US. Had Pork Souvlaki most days while there. It is so good. Try with the Greek Village salad. Hint, if you can find it get Greek imported Feta instead of domestic. You won't regret it. I like Dodoni.

Seeing you smell the smoke reminds me of the old chef at his pita restaurant in Retymno (Crete) he took pride making his pitas and they also tasted like that

Bravo agori mou, I like to cube it small but I like to pick every other cube with a nice layer of fat. When that fat melts and grills that just adds another layer of flavor to the souvlaki. I also add orange juice to my marinade..

In Crete traditionally they do a varietion where they keep the meat in vinegar overnight, and then bbqing it for just afew minutes
There are all kinds of methods from all over Greece....

I have been to 14 different countries in my military career, and by far the best was Greece......The people are great and the food is excellent. I never tasted any Greek food that I didn't like.
