Just pulling mine out of the oven now. From the results (and also the sound of his oven), I think he uses a convection oven. I’ve lived in the US too long and have got used to not using convection as I think most recipes here don’t. I switched to convection mode to finish it off and it looks bloody gorgeous.

That looks so good! I'd put that dough in a rectangular pan for a thinner focaccia. It's great to cut those into squares, slice through the middle to create two halves, then use for a sandwich.
Try finding a Ross near you they usually have that kind of thing I always buy kitchen utensils there. started doing that when I worked in the restaurant industry they always have good beaters like spatulas, utensils and tongs. I've seen those tiny ceramic pots there.

It's olfactory fatigue. As you're cooking the aroma of the food is interpreted as taste and leads to sensory fatigue, so that by the time you eat your senses are already used to having "tasted" the food via smell.

No, I get his point. Olive oil is outrageously expensive in my country. Most people can't afford just pouring it in everything like it's a freaking oily rain.
