Caramel popcorn chocolate clusters recipe- 4 Mins or Less Recipes

  • How to make caramel popcorn with Alex and Felix. This recipe uses chunks of caramel popcorn to create sweet chocolate clusters.

    Recipe:
    3/4 cups of popcorn kernals
    1-2 cups nuts (optional, we used spicy corn nuts which really made this snack)
    4 tablespoons butter
    1 1/4 cups brown sugar
    1/4 cup light corn syrup
    2 teaspoons vanilla extract
    1/2 teaspoon salt
    1/4 teaspoon baking soda
    8 ounces dark chocolate
    2 ounces white chocolate
    Directions:
    Pop the popcorn. Once popped, mix in the nuts in a large bowl.
    To make the caramel add the butter, brown sugar, and light corn syrup to a pot over medium heat. Heat until 255 degrees F, making sure to brush down the sides of the pot with water while cooking to wash down any sugar.
    Remove the pot from the stove once the mix has reached 255 degrees and let sit for 5 mins before stirring in the vanilla extract, salt, and baking soda. When stirring in the baking soda the mix will start to bubble. Once mixed, the caramel should be lighter in colour and smooth.
    Pour the caramel over the popcorn and nuts. Make sure to work fast as the caramel will set quickly. Try to keep the popcorn in clusters as you will want chunks to dip later.
    Once the caramel has coated the popcorn, spread the popcorn in a layer over a baking tray lined with parchment paper.
    Bake at 250 degrees F for 1 hour and 30 mins. At the 30 minute and 1 hour mark, take the popcorn out of the oven and move the popcorn around to make sure everything dries evenly.
    To make the tempered chocolate to dip the clusters, add the dark chocolate to a microwave safe bowl. Microwave for 30 seconds then take the chocolate out of the microwave and stir it around. Put back in the microwave for 20 seconds, stir, 15 seconds, stir, 10 seconds, stir, etc. Do this until the chocolate is just melted and you should be fine. Times will depend on your microwave but it took us about 1 min and 15 seconds total.
    Once finished and cooled, dip the popcorn clusters in the tempered dark chocolate and let the chocolate set before drizzling white chocolate all over the clusters. The white chocolate can be tempered the same way as the dark chocolate but be aware that white chocolate melts quicker.

      +Ankit Ostwal We used brown sugar for the caramel. I believe it was light brown sugar specifically but any brown sugar will work.
