Blueberry Cheesecake | Alex and Felix Recipes

This cheesecake features a blueberry reduction that has been mixed into the batter, as well as used as a sauce on top. Chill for best results.
Recipe:
Crust:
2 1/2 - 3 cups graham cracker crumbs
5 ounces melted unsalted butter
1/3 cup sugar
Cheesecake:
24 ounces cream cheese (full fat)
1 cup sugar
1 cup yogurt (we used 3%, more fat the better)
3 eggs
1 1/2 teaspoons vanilla
Blueberry sauce:
1 1/2 cups blueberries
2 tablespoons sugar
2 teaspoons cornstarch
1 tablespoon warm water
squeeze of lemon juice (2 teaspoons? eyeball what works)
Directions:
- For the crust melt the butter. In a bowl whisk 2 cups of graham cracker crumbs together with the sugar. Add the melted butter and mix to combine. Add more graham cracker crumbs as needed until a wet sand like consistency is formed like in the video.
- Press the crust into a 10 inch spring form pan. Bake for 10 minutes at 350.
- To make the filling, cream together the sugar and cream cheese. Once mixed, add the eggs and combine. Add the yogurt and the rest of the ingredients. Use an immersion blender to make the filling smooth.
- To make the blueberry sauce, start with the corn starch in a small bowl, and add the lemon juice and water. Set aside.
- In a sauce pan over medium heat, add the blueberries and sugar. Cook for a couple minutes until the blueberries are mushy and have given up a lot of liquid.
- Add the corn starch mix and let simmer for a couple minutes until slightly thickened. Remove from heat and let cool for 10 minutes.
- Pour the creme cheese filling into the pan over the baked graham cracker crumbs. Add the blueberry sauce and swirl with a knife to create the pattern.
- Place the pan into a large tray and fill with hot water 1-2 inches up the side of your pan. Be careful not to get any water into the cheesecake and make sure the cheesecake pan is well wrapped in foil to avoid any water leaking in.
- Bake for ~60 minutes at 350 until slightly springy/browned. Start checking at 50 minutes or so.
- Once finished, turn the oven off and let the cake sit in the oven to cool down with the oven door slightly ajar. This will prevent cracks from being exposed to colder air too quickly.
- Remove from the oven after 1 hour.
- Add the blueberry sauce to the top of the cake to finish.
- Preferably chill before serving, but make your own decisions.

    It looks wonderful and I'm sure it will taste just as good as it looks. However, when you were putting the wedges on the dough, the skin was facing down. When it came out of the oven, the skin was facing up. Is there a trick to that? 😂 Seriously, does it make a difference on the recipe the way the wedges are placed, or doesn't it matter?

    Works great if you pay attention to instructions. th-cam.com/users/postUgkxviiltW7NlHbp_VL_bLbIkbLAvILVhnia For those that complain about "mushy" or "wet" rice I suspect they are using the included cup to measure rice (which is really only 3/4 cup) and then putting in water using a separate measuring cup that is a full cup. This results in too much water and you will get mushy or wet rice and think it is not done. Just use the included cup for both rice and water, or your own measuring cup for rice and water according to your package directions. It will come out fine. I've used mine for years for brown and white rice. If your machine is bubbling white froth out of the steam vent then it means you should have rinsed your brand of rice first to remove some of the starch. Sheesh. Makes me wonder how people can cook well enough to feed themselves.

    Rice cooker cake takes very long time , generally 45 to 60 mins with 2 to 3 re-cook. But it allows more moisture to stay inside cakes, but oven easily dried 30 - 40% moisture...

    I made half the quantity and baked it for 10 minutes less. It was superb! Planning to serve it at my next dinner party. A glass of port served with it rounds it off to a 5 star dessert.

    over mixing pancake batter causes gluten formation, which will give you a doughy, breadlike texture. you should mix until only small lumps remain, then let it rest in the refrigerator for 10-30 minutes to finish hydrating.

    If you want to weigh your carrot before grating, 1 Cup is 100 grams. I recommend freezing that amount in small containers like the cream cheese tubs, to have on hand for baking.

    These are amazing! Best carrot muffins ever!!! So light and fluffy! I normally reduce the sweetener when baking, but I didn't this time, thinking that the yogourt would require the full cup called for in this recipe. I use a combination of coconut sugar (which has a lower glycemic index and tastes less sweet) and Splenda, but still use only 3/4 cups when baked goods call for 1 cup of sweetener. I'll do that next time as the muffins are delicious, but too sweet for me. Note: With Splenda, baked goods tend to be done earlier. Mine were done after 20 of the 25 minutes at 375.

      A better bet would be to avoid the margarine and use a vegetable oil, likely one solid at room temperatures like coconut oil. In general I'm against policing other people health or dietary choices but margarine is very close to straight up poison. Practically anything else would be a better choice. If you're concerned is due to a dairy allergy, then I would recommend replacing the butter with lard.

    Pricking the dough, or docking as it's known professionally, is only needed when you are prebaking the crust. In this instance, you are cooking the filling too, so no docking is required.

    Instant/quick cooking oats are rolled oats that were partially cooked (before being dried again) in order to reduce the cooking time needed. You can use the quick cooking oats in pretty much any recipe that calls for old fashioned rolled oats (it may just turn out softer) but the opposite isn’t true. I made no bake cookies ONCE with old fashioned oats, never again, they never set up.
