Chakkaravalli Kizhangu Varathu Araitha Kuzhambu | Ammavum Naanum Episode #14 - Rakesh Raghunathan

  • This is one of the most flavorful kuzhambus that we make at home using Chakkaravalli Kizhangu or sweet potatoes. The secret lies in the spice paste that's roasted and ground. The sweetness from the potatoes combined with the tang from tamarind is match made in heaven. Watch this recipe as Amma teaches me on the next episode of Ammavum Naanum.
    Ingredients :
    * Sweet potatoes - 2 cut in chunks with skin
    * Tamarind - size of medium lemon
    * Water - 2 cups
    * Turmeric - 1 tsp
    * Salt
    To Roast and Grind to a Paste
    * Sesame oil - 2 tsp
    * Asafoetida - 1 tsp
    * Coriander seeds - 2 tbsp
    * Channa dhal -1.5 tbsp
    * Toor dhal - 1 tbsp
    * Urad dhal - 1 tsp
    * Red chillies- 4
    Tempering
    * Mustard seeds - 1 tsp
    * Curry leaves - 1 sprig
    Method :
    1. Extract tamarind juice in 2 cups of water and boil the sweet potatoes along with salt and turmeric powder.
    2. In a separate wok, heat oil, and add the ingredients given under ' to roast and grind to a paste' and fry. Set aside to cool.
    3. Once cool, grind to a coarse paste with water.
    4. Check the sweet potatoes if they are cooked and the raw smell of the tamarind is gone.
    5. Add the ground paste and dilute with water if necessary. check for salt.
    6. Temper the Kuzhambu with mustard and curry leaves and pour over.

    The combination of Tirunelveli and Tanjore has produced some great receipts too. The Kerala input adds to it. I don’t understand how people think it is boring to be a vegetarian. For the non veg there will never be a burst of flavours like in veg,instead of smothering it in onion garlic tomato, ginger

    We are just 2 here in the house. I was living with my in-laws for 30 yrs. They are gone now. My children are away in US AND GERMANY with their families. My In-laws were from Tanjore. So , so many varieties I used to cook in large quantities. Now just cooking for 2 n that too my husband likes selected few dishes n vegetables. Oh! How I miss those days. I just don't miss your episodes n get little satisfaction from watching it.

    Rakesh, whenever I see your videoclips, I am reminded of my mom’s work in our kitchen until she had a stroke a couple of years back. I used to tease her just the way you do. Ramaji’s “ sitha naazhi” reminded me of my maternal grandma’s usage of the same.     Rakesh, why does the black iron vessel always have some previous food stuck on? Keeping things spotless and clean attracts viewers. Could you not pre-measure all ingredients in tablespoons, teaspoons etc and neatly lay it out before Amma enters the kitchen? This will be great for beginners. Also the kitchen counter can be more clutter free and that itself will create a neat visual which will get you more subscribers. .Definitely you can afford to do these things to polish the quality of your videos. This is constructive criticism offered to enhance your content-don't intend to hurt you.
