Kathrikkai Vendhaya Masiyal | Ammavum Naanum Episode #13 | A Cookery Web Series - Rakesh Raghunathan

  • Here is the recipe for Kathrikkai Vendhaya Masiyal / கத்திரிக்கா வெந்தய மசியல்
    This is a make shift set up for the #AmmavumNaanum series. We were almost ready to start shoot for Season 2, when the #Corona outbreak began. So we came up with something like this - literally fresh from the kitchen. Let me know how you guys liked it.
    Kathrikkai Vendhaya Masiyal:
    Ingredients:
    * Eggplant (green) - 2 slit length wise and into small pieces
    * Green chillies - 2 slit
    * Asafoetida - 1/2 tsp
    * Toor dhal - 1 cup
    * Fenugreek seeds - a little more than 1/4 cup
    * Turmeric - 1 tsp
    * Sambar powder - 3 tsp
    * Tamarind - size of a lemon
    * Salt - to taste
    * Coriander leaves for garnish
    Tempering:
    * Mustard - 1 tsp
    * Red chilies - 2
    Method:
    * Pressure cook toor dhal and fenugreek seeds with turmeric and oil. Make sure it is not mushy
    * Extract tamarind juice and boil adding some turmeric, asafoetida, salt
    * Once this comes to a boil, add the slit eggplants, cover and cook till soft
    * Add the cooked toor dhal and fenugreek to the mixture and let it boil over.
    * Add water to dilute if necessary
    * Add sambar powder, check for salt.
    * Temper with mustard seeds and red chillies.
    * Garnish with coarsely chopped coriander leaves.
    * Serve hot with rice of your choice.

    திரு. ராகேஷ் பிரபலமான நிகழ்ச்சி தொகுப்பாளர். சமையல் கலை நிபுணர் அப்படி இருந்த பொழுதிலும் தன்னுடைய வீட்டில் தன்னுடைய தாயாருடன் மிக இயல்பாக ஒர் சமையற்கட்டில் சமையலோடு உரையாடல் தொடர்கிறது மிகவும் அருமை. இதேமாதரி அக்ரஹாரத்து ரெசிப்பி என்ற நிகழ்ச்சி இதேமாதிரி அம்மா பிள்ளை என்ற உறவோடு இருந்தாலும் இது சற்று வித்யாசம் பட்டதே. இது மேலும் தனித்தது என்பதற்கு ஓர் உதாரணம் இந்த சமையல் நிகழ்ச்சியில் நடுவில் ராகேஷின் அம்மா கூடுதலாக தண்ணீர் ஊற்றினார் மீண்டும் தண்ணீர் பத்தாதது போகவே அடுத்த முறையும் சிறிது தண்ணீர் ஊற்றினார் இதுதான் மிக இயல்பாக வந்த வீடியோ பெண்கள் எப்பொழுதுமே அளவு குறைவாக எடுத்து நடுவில் எது குறைவாக உள்ளதோ அதை சேர்த்து ருசியினை மேம்படுத்துவர் உதாரணமாக உப்பு காரம் போன்றவற்றுக்கு ருசிக்கு தகுந்தவாறு இடையிலே இந்த மாயாஜாலம் நடக்கும். அது இந்த வீடியோவிலும் உள்ளது. அதன் காரணமாக தான் இந்த வீடியோ மனதிற்கு நெருக்கமான உள்ளது. தாங்கள் நினைத்து இருந்தால் அந்த பகுதியை மட்டும் நீக்கிவிட்டு ஒரு 💯% அக்மார்க் ஃபுரபசனல் வீடியோவாக கொடுத்து இருக்கலாம் ஆனால் அவ்வாறாக இல்லாமல் உள்ளது உள்ளபடி இயல்பாக வந்ததும் அம்மா பிள்ளை ஒரு பாண்டிங்கோடு இருந்தது மிக அற்புதம். இதேமாதிரி பெரிதாக எடிட்டிங் இல்லாமல் இயல்பாக இருந்தால் மேலும் மக்களிடம் போய் சேரும். இது மாதிரியான வீடியோகளை வெளியிடவும். வாழ்த்துக்கள். நன்றி வணக்கம்.

    All those who have disliked either do not like vegeterian dishes or Kathirikkai or something that cannot be explained. Hats off to Rajesh and his mom for explaining in detail some traditional recipes.

    Enjoy Aunty’s cooking so much . My mom never taught me cooking. I love the way she teaches with minute details . Her “ nuances of cooking” is the highlight. Just the way a mother would teach her daughter before marriage - right from which spoon to use .

    Very beautifully explained by Amma. Rakesh, I like your chella kovam when amma is explaining. I love vendhiyam but am allergic to Hing so hopefully I will make this without hing. Amma, you explained it so beautifully and showed the whole procedure, makes a lot of difference.

    I tried it with Red Pumpkin.. since I had time I soaked the fenugreek overnight, otherwise followed the recipe. Turned out excellent.

    Great recipe .my Patti used to do this but now only came to know that vendhayam also is boiled along with too dal , definitely will try this as my mouth was watering seeing this video itself.     Can anna or someone clarify my doubt.. methi when it is cooked gives a slight bitter taste.. also amma says to add 1/3 rd quantity of methi to toor dal quantity.. shld we add jaggery to balance the taste...by the way this masiyal looks so tempting.. i have yellow pumpkin so tomorrow gng to try for sure..

    We make venthiya masiyal more green chili for hotness without sambar powder. Add half kattu coriander leaves as per my mother's recipe.

    Tried this today! Loved it, என்ன ஒரு வாசனை அந்த வெந்தயத்துல...didn’t have rail kathirikkai is substituted with aubergine and butternut squash, which was closest to parangikkai that I could lay my hands on 😬😬turned out yummy nevertheless 👌 Thank you for this traditional recipe!
