To make whole wheat pits, use 1 ½ cup whole wheat flour and 1 ½ cup all-purpose flour. If you want to make gluten free pita, you can simply replace the flour with the same amount of an all-purpose gluten free flour. Bob's Red Mill all-purpose gluten free flour or Bob's Red Mill 1 to 1 baking flour will work in this recipe.

How long would I need to knead in a Kenwood with a dough hook. I have shoulder problems and difficult to knead. I live in the land of pitta bread on a Greek island and would like to give it a try please.
Possibly, but it would be best to start with at least 1/2 all-purpose flour and 1/2 whole wheat flour... then adjust from there on future attempts. We have not had the best success ourselves using all whole wheat flour with this specific recipe as written. We feel like more tweaks are needed to make that work.
You can simply replace the flour here with the same amount of an all-purpose gluten free flour. Bob's Red Mill all-purpose gluten free flour or Bob's Red Mill 1 to 1 baking flour will work in this recipe.
Oh my! She actually used oven mitts to pull sponge out?! If it that hot your sponge is ruined! It’s best to use sourdough starter anyway. Much healthier as well as einkorn flour and not dirty white flour!

Working in batches, place the rolled-out pitas directly on the hot baking baking sheet (I was only able to fit 2 at a time). Bake for 2 minutes on one side, and then, using a pair of tongs, carefully turn pita over to bake for 1 minute on the other side. The pita will puff nicely and should be ready. Remove from the oven and cover the baked pitas with a clean towel while you work on the rest of the pitas.
