I’ve only used butter for the bechamel, and add a handful of Greek grated hard yellow cheese like Kaseri, Kefalogravgera, or Kefalotyri, if none available, Parmesan is a perfect substitute. Also, more cheese to cover the top for a beautiful golden color.

Tonight I used your meat sauce portion of the recipe and basically made a goulash with spinach and feta tortellini and macaroni. It was just a “stuff we had in the house dinner”, and it was SO good. I added some oregano and didn’t have crushed tomatoes so I just used a can of diced and two cans of sauce. Writing it down so I can make it again. And this recipe is still on my list. Thank you!
Printed easily findable like at end of video would be helpful.. I cook but still seeing the amounts of things like say the herbs would be easier.. At a glance to know if I have I hand or need to buy

Holy cow. I JUST made this from an American cookbook. Then I said to my self and my husband, you know there HAS to be an easier way to do this. I used two pans, 4 little bowls, 3 big bowls, 🤦♀️. So I look, and there you are. I just KNEW my friend’s mother didn’t jump through hoops lol. NEXT time… 🙈. Like I’ve always said, your site is the absolute best.
I made it twice this month. The second time, I made the bechamel with butter instead of Greek olive oil. Both times it come out great. I'd post a picture of it if I could.
the moment I saw it's penne I know it's wrong 😭😭😭😭😭 I feel this shouldn't be labelled as Greek pastistio as it's misleading. we use the long hollow noodles. it may be more appropriate to refer to it as "your own pastitsio inspired version" of it.

The trick to the béchamel, Greek way, is the addition of nutmeg, + Kefalograviera. Top w Semolina! Wine 4 sauce , should be MAVRODAFNI.

Not traditional if the correct pasta isn't used....
My auntie is Greek and she uses penne as well.Of course you can use a different pasta. But my mother always used the original long thick macaroni🎉
