Most underrated egg recipe🥚

Kai look kuey- Thai deep fried soft boiled eggs:
2 eggs
3-4 dried birds eye chillies
1.5 tbsp water
2 tbsp tamarind paste
2 tbsp palm sugar
1 tbsp fish sauce
deep fried shallots or garlic for topping
chopped coriander for topping
