I just made them yesterday, and with my inexperienced preparation they had a texture that reminded me of calamari... again, like thick konjaku noodles, but without the fishy smell. I think it is definitely worth using as a base recipe and tweaking it to soften the texture.

Hello LynLyn, I tried your recipe for the viral noodles and I have to say that they didn't form as well as the ones from one of the other influencers I tried. I added a little turmeric for color because I think yellow coloured noodle makes me think of traditional pasta. I came up with another time-saving tip using my stand mixer for the vortex spherefication process. My stand mixer was on low with the bread attachment and all I had to do was squeeze the liquid in and not have to do anything with my other hand😂. It worked very well however you can only put one third of the egg mixture at a time as it all twists onto the bread mixer paddle and then starts slapping water all over the place. 😂. It is a good way for anyone with arthritic hands to make these noodles.

Update, I did them wrong, you have to let them sit overnight, then rinse and do not forget the baking soda and vinegar bath ! After that, they came out just fine.
I just made the recipe. I think if you don't use duck eggs, you should consider jumbo chicken eggs, or a couple of smaller eggs and another yolk. Duck eggs have much larger yolks in proportion to the egg size.
eggs are sterile inside the shell, the only chance of bacterial contamination comes from on the surface of the shell. So just wash the eggs before cracking if you are concerned, however in the USA eggs are all treated to kill any bacteria anyway
I'm not the one who made the video, but recently was given a duck egg. It is larger than a chicken egg. I scrabble it and it tasted the same to me. Probably use 3 or four chicken eggs to replace duck eggs.

Tomatoes have a lot of lectin in them so you need to peel them to see them and you should probably quick cook them really quick
