12 Days of Christmas Cookies #2: Strawberry Crumble Cookies

  • 3 C Flour
    1 C Sugar
    1 C Butter chilled, cubed
    2 tsp Baking powder
    2 Eggs lightly whisked
    Preserves of your choice, or a variety Strawberry, Raspberry, Apricot, Boysenberry
    Powdered sugar for dusting
    Bake 375° for 15-18 minutes

    I made these cookies and they taste great. Thanks for the recipe. However, I was on my quest to find the Costco recipe and found exactly what it takes. Leaving it here in case you want to try:
    300g flour
    100g sugar (I preferred powdered but you can also use granulated)
    1 cup softened butter.
    Mix sugar and flour, then incorporate the butter. Mix until you get a very soft dough.
    For the crumbles I segregated 1/3 of the dough and froze it for 30 minutes. Then grated with at biggest setting.
    Use molding, preserve, baking setting and powdered sugar just like in the video.
    Don't add any eggs or baking powder / soda as that will make it bread like.

    I used the food processor and it turns like dough 😞 I don’t know what happened! I put it in the oven, let’s see what is my result!

      The food processor is such a high speed piece of equipment, it can be used (though I don't use it for my cookies) but it t needs to be in short quick pulses. They may not turn out the same but I'm sure they'll be they'll be yummy. I'm very curious to know how they turn out. Happy baking my friend

    I love a good jam cookie and you really were generous with the jam THANK GOD! Are these like shortbread crumble cookies? Raspberry jam would be off the chain! Offset spatula!     I want to make these today but I don’t know how much salt to add. It’s not in the description area. Hopefully you can help me!

      Salt with anything is really just too taste. Unless it's bread or kinda matters more there but 9 out of 10 desserts would call for 1 tsp
      I more than often use less. Trust yourself I'll bet you'll feel it

      @@TheBijouBaker thank you for responding I actually made them then I saw your response. I remembered hearing someone say baking recipes usually call for 1tsp so that’s what I did! They came out amazing my hubby loved them and he’s not a big sweets person. Only problem was my dough crumble came out less crumbly than yours I feel like I might have overworked it with my hands and melted the butter but they still came out delicious. Thank you for sharing this super easy and yummy recipe. I will be making these for the holidays for sure

      You can but the texture will be flakier which isn't a bad thing. Have fun with it

      Oh ok. 1st I sprayed the pan for easy release then after they cooked a bit I took a little spatula and ran it around the sides, they poo out easily
