Hi Geoff, Made these despite only having a muffin tin and it still worked out really good. I unfortunately overworked the mixture, so had a lump of dough, but still managed to make 7 of them, without too much difficulty and they were delicious. I've still got a jar of Xmas mincemeat left over from last year, so will be using your recipe with a different filling. Thanks again, Davy

Hi Nasreen Rehman, You may try lemon curd, however since that is made with butter it is likely to melt whilst being baked. What might be better, if you want a lemon flavour, is a lemon custard, made with milk eggs and sugar and then allowed to cool down before being used. You can also use things like dates or figs made into puree.

Hi Geoff. My mixture was very greasy and sticky when I was rubbing the butter and flour. I used my hands so maybe why this happened.
