Hello po good day, Kumusta? It's been awhile that I haven't uploaded but now I'm back with delicious Bingka Bisaya of Mindanao! This is the real Authentic Bibingka! My Grandma used to make this when I was a child. She used tuba as raising agent and cooked in tinned oven with charcoal on the top and underneath. Well done for showing the right way of making traditional Bibingka the Visayan way.
The ingenuity of those who cannot afford an oven really amazes me. So guys, if you see one selling, you know the hard work. PLEASE DO NOT HAGGLE. Pay them the price they ask and you save them from poverty.
I sorely miss this . As a student nurse at Silliman , we visited outlying barrios . A lady made extraordinarily delicious bingka in a makeshift oven heated by coconut shell "uling" giving her product a unique flavor. She brushed thick coconut milk on top as finishing touch with a hint of salt then a final browning/caramilizing with embers on a piece of metal on top. The extra work she does set her bingka apart- which I can't duplicate in my modern oven. Thanks for the tips you unselfishly shared.
I made this twice already and it's the same taste of what I had in the Philippines growing up. My bisaya friends here in the US were happy to taste it again because it's the taste they remember back home. Thank you Dai Allyn for sharing your recipe and showing how to make this! @@ninia3254 Hindi sya matigas. Mas maganda kung from real rice I think, so that's what I did. I tried the mix from the box na mabili mo sa asian store and it's not the same. The smell and the taste is different.

Yes!me too..lola ko dati noong nabubuhay pa, lagi syang nagluluto ng mga kakanin tapos nilalako nya at bingka ang pinakapaborito sa lahat.nandito po ako sa luzon ngayon pero sobrang iba ang bibingka nila dito or bingka ang layo po sa bingka sa mindanao!!

This is the authentic way of making bibingka. These days, we could buy ground rice, coconut cream and milk, and use the oven. For the toasted crust, we could turn from oven cooking to broil briefly. I think it will turn out the same.
@@Tezz-og8rq the package is printed in red and says Erawan Brand with 3 elephants within the circle. The top most says rice flour. The green package is printed in green and is glutinous rice flour which is good for making puto. You can find these in most Asian stores.
I’m from Canada but I grew up in North Cotabato province of Mindanao. I would eat this every saturday and sunday jn the morning after my dad comes back from the palenke. This is so nostalgic, not only the binka itself, but the language and noises in the background. Thank you for this.
