    Ingredients for Fried Chicken Livers
    1-2 lbs. CHICKEN LIVERS
    1 EGG
    1 cup all-purpose FLOUR
    some MUSTARD, HOT SAUCE, or HORSERADISH SAUCE, or all three
    and SEASONINGS like
    SALT, BLACK PEPPER, CHILI PEPPER, GARLIC, etc.
    plus OIL for cooking
    and PARSLEY for a garnish
    How to Make the Best Fried Chicken Livers
    Use chicken livers that are rich in color and firm, at least for liver. Color may vary for livers, but the liver should not be slimy, or have an off smell. Wash the chicken liver in cold water and then drain. Clean and trim the clivers by cutting away any veiny or sinewy parts and any discolored areas. Cleaning and trimming is the most time consuming part of the chicken liver recipe, but it’s a key part, and worth doing well, because chewy liver is no fun.
    Now make a marinade. In a bowl, crack one egg and add some flavor. I like to use creamy horseradish sauce, or spicy mustard, or hot sauce, or all three. There is no wrong combination. Use whatever amount is suitable for the number of livers you are cooking. Mix the marinade and then add the livers and toss until well coated, then place bowl in the fridge for at least 20 minutes, or until ready to cook.
    In a bowl, mix flour and seasoning. Be heavy handed with the seasoning!
    Remove the liver from the marinade and dredge in the flour until coated.
    Heat oil in a skillet on medium heat. It doesn’t take a lot of cooking oil, just enough to cover the bottom of the pan. Check current prices for nice non-stick skillet on Amazon amzn.to/2NRqB07
    When oil is hot, carefully add livers. Chicken livers can spatter and pop in the grease, so exercise care. Cook the livers for 2-3 minutes on each side, or until cooked through. Liver cooks rapidly, so it doesn’t take long. Overcooked liver can have a chalky, grainy taste, and you want to avoid this.
    Remove the cooked chicken livers from the skillet and drain on a paper towel. Place on a serving dish and garnish with chopped parsley. Serve hot!

    Does anyone eat liver any more? I think liver is one of those dishes that you grew up eating or it doesn't hold much appeal. My mama cooked liver regularly when I was a kid, so it's one of those time-machine ingredients that I love. Liver probably sounds awful if you never tried it before, but try it!

      Lol, I got stuck eating liver in my teens when a doctor decided I was anemic. Crash course on learning to deal with it. It isn't in vogue presently. Doesn't make it any less enjoyable when cooked properly.

      Love chicken, beef and pork liver. Also like chicken gizzards. I like to saute onions with mine. Only a couple of places we go to eat has them. Golden Corral buffet and Cracker Barrel Have liver. I usually get some at Golden Corral.

      Cracker Barrel is a place we like to eat at when we're driving around Florida...I haven't tried the liver there, but I will make a point to next time...I always get breakfast or the catfish...often the drawback to eating at a regular place is that you find a dish you like and just stick with it instead of trying other things on the menu...which is a good thing too

    Just made these. I did soak the prepared chicken livers in milk for 2 hours before marinating in the batter mixture of this recipe. Livers were very mild, tender, and excellent tasting. Thank you Chef Buck.

      I've not eaten gizzards too often...my mom used to cook up the gizzard, liver, and heart whenever she cooked chicken, but those parts mostly ended up on my dad's plate...the store stocked small plastic tubs of gizzards for sale at the Publix market where I bought these livers, but the gizzards were in the frozen foods section.

    7:26 - i feel for you where the pan is tilted and the oil goes to one side, happens on even some of the best of stove tops. really loved your video, and yes, i now it was 3 years ago, but thats ok. i also love that you cooked them also without breading, just for those that are really cutting carbs, they can still enjoy them. great job!

    I never heard of washing chicken livers before cooking them. I will give that a try. I have always breaded them as they are and fried. At my age now I can only have them about once every three months. Gives me problems in my joints like gout if I eat them very often. They are also really great boiled and smashed into a giblet type of gravy as well. People will love the gravy until they ask for the recipe and discover what I put in it.

      ha!--yeah, no one wants to know how the sausage is made! ...I've gotten to where I don't wash chicken anymore before i cook it 'cause it just makes a mess I have to clean up, but with chicken livers, I find that dumping them in water and draining them before I trim them makes the livers a bit less slippery/sticky/bloody and easier to handle.

    There used to a couple of places that we'd go to to get fried chicken livers and gizzards, but they either stopped making them or don't make them well anymore. My son was saying how much he misses them so I'm going to give this chicken liver recipe a try next week.

    came across your video while looking for chicken liver recipes online. very entertaining! note for the ladies here: I tend to go for chicken liver or blood curd dishes during that time of month to re-up on iron, folate, and vit B12! does wonders for my energy levels and mood!! maybe this is just me, but I feel like I can literally feel life flow back into me the second I bite into it. give it a try!

    In the 1960s, we'd have roast chicken nearly every Sunday. My mother would save the livers and every couple months we'd have chicken liver, bacon and onion fry night. Now THAT was comfort food! It was an entry drug on my way to loving beef liver.

    i grew up with stemed chicken liver, then I stir fried with green pepper, onion and oyster sauce, I'll defintelt tried this fried recipe. I think I'll will it.

      liver is one of my favorite things to order from a restaurant menu when I find it as an option...I order liver at a Cuban restaurant a few times and they sauteed it up with lots of bell peppers--super delicious.

    Whole Foods sells Bell & Evans Organic chicken livers in the little Tub. 18 ournces for $6.00. Better than steak if you cook the bacon first and then cook the onions and liver in the bacon fat!

    I love chicken liver..usually I boil first with salt and then fried it for a few minutes..

    Chef Buck, I just tried a new sandwich that I wondered if it would be good the last time I made a grilled cheese sandwich. I wondered if it would be good with some sauerkraut added like a Rueben sandwich and heck ya it was good, quick and simple. Bread, butter, mayonnaise, sauerkraut and cheese. I put the mayo on the inside parts of the bread. Next time I won’t put the cheese on the mayo with the sauerkraut in the middle between the cheese layers because the cheese and sauerkraut slides right out. I used Swiss cheese. There’s one other video that makes this with mustard.

    OMG! You must be able to see 👀into out minds (or fridges lol) first it was the pork tenderloin with the bean side dish now I see FRIED chicken livers! I just bought some! Tomorrow that's what is gonna be my brunch! Btw the pork and beans were really good. Ty so much for this video cause I love livers and never made my own.     Have never cleaned ck livers to that degree.(the cutting) Never knew they had to be. Maybe I'll try it. Never noticed.

      yes you must! liver might be a good food for a long voyage if you have room to freeze them...one of the most nutrient dense foods you can eat

    I'm old school. My chicken livers have to be fried in butter. Then, onions into the pan cooked in the left over yummy goodness still in the pan. Pour those onions over those livers. Yummy. 😁👍🏻

    I never prep. I just cut them into slightly smaller piece add salt and garlic granules. Marinate and then shallow fry.

      yeah, I think a lot of people do, although I've never bought and cooked the gizzards and hearts in bulk, just as the giblets that come with a whole chicken.

    I used to love getting chicken liver and gizzards from KFC, too bad they no longer on the menu. I need to try this recipe out.

    I tried beer batterd livers chicken that is with having a bowl of seasons flower and a bowl of a beaten eggs and milk and a little beer mix the eggs milk and beer thouroly dip your livers in the egg milk and beer and then your seasons flour and simply fry them untill golden brown . Believe me the taste is good.
