I grew up eating venison liver, beef and chicken livers too. I moved to the East Coast where they add bacon to their fried liver amd onions.. yummy! My favorite way to eat beef liver is fried rare with salt, pepper and oregano chopped, and added on top of a salad with homemade vinegarette. A bit of raw liver blended with tomato juice, celery, onion, herbs, salt and hot sauce make a rasty drink.

Nice recipe. I also like the vinegar (I use balsamic) but any wine vinegar cuts through the fattiness nicely.
I'm from Gloucestershire in England, it's the southern neighbour of Worcestershire.
We pronounce Gloucester / Gloucestershire "Gloster" and "Glostersher" respectively, (or Glostersheer, but never Glostershire).
    Likewise, Worcestershire = "Woostersher ".
Only the Americans call the sauce Worcestershire Sauce. We call it Wooster Sauce, irrespective of what it says on the bottle 😅
(Don't be misled by your American viewers, the other chap from the UK also got it right😊).

Sauce, Mint Jelly, et cetera…I use only the authentic brands from U.K. as the generic knock offs in Canada couldn’t possibly taste the same & why be dissapoinnted. Yes, the U.K. Brands cost more, but some things I will NOT sacrifice. Cheers.

I've never tasted it but as i said before my plate is about 3/4th onions to liver so that might mask any bitterness as well i carmelize my onions much farther down. It takes awhile but dam worth it. Ok, off to cook the liver i have waiting!

Fabulous! A perennial favourite here in Britain, too. In lieu of milk, I use salty water. In the UK, liver and onions, often with streaky bacon, is served on bed of mashed potato with a thick, reduced onion gravy, and greens. I ate it in a high class restaurant recently. My favourite is ox or calf's liver. We say _wooh'st'shuh_ sauce, or just _wooh'stuh_ sauce. See the wiki.

Organ meats ARE where the most dense vitamins & minerals are found. Pass historical generations feasted upon Organ meats. The heart, liver, Kidneys, all the parts of the endocrine system were highly valued As a food source. Because of the strong gamey taste many times these meats were made into sausage, or blended with muscle meats which are lower nutritional quality but having milder taste.

You cannot go wrong with the liver. Rare or well done it's so delicious.
However if you find it unappetizing I would recommend a lot of spices and herbs of your like. Plus the milk bath as the video suggests and let it overnight for even better results. Personally I use butter and EVO oil combined as they cover the smell better. Also I use red wine and rosemary (whole fresh branches).
Before cooking I season it with salt, pepper, smoked paprika and cumin. Then I coat it with flour. I do caramelize the onions in a separate pan adding a pinch of curry or turmeric.

Vinegar is the way to go. We (Greeks) also had this wtih lemon on top after it's cooked in place of vinegar. Both of these acids cut down through the fat and take away the gaminess. For me I would crust up a nice hero loaf and spoon this amazingness in there, top it with some smoked provolone, and throw it under the broiler. Splash some mustard in between and fold it up for a hero like you never had! Enjoy! Thank you for a great video on an inexpensive and super nutritional dish!
