Mahalo for sharing this recipe. I learned a few things from this video. Especially the cold roux, red wine, and beef bouillon paste. I have tried many "Hawaii" style beef stew recipes. Simple to learn, yet produces a rich flavored stew. In the video it wasn't shown the Chef adding the Red wine while browning the beef, doing this gave the browned beef a nice rosey color. Using beef bouillon paste is essential, saves on having to use salt & pepper, and kicks up the taste to onolicious level! Making the cold roux much easier than cooking roux the regular way. I am thankful for the chef explaining how to mix in the roux, and tips on how to avoid getting those 'dumpling balls' when using flour or Starch.
I love using a roux..Adds so much to the dish When making your roux, trying using equal amounts of ap flour and butter...work into a paste and use in your stew just as you did the one with oil

Aloha, no not really, if your meat was sitting in the bag long time or wasn't bled out well (ie. "to fresh") or sitting in it's own blood for awhile, then you can wash or boil first but we don't think it's necessary, if you do decide to give a quick boil, make sure you dry meat well before browning so you can create that crust and seal... this is just our opinion... Hi Sami, you can you use tripe with this recipe... just add little more beef stock or concentrate to the broth... but pretty much the same after that... hope that helps... Stay Blessed... Aloha!
As we explained in the video we do not use potatoes because we make so much at one te the potatoes will start to degrade and make the stew gravy "grainy" by all means if you're making for home use add potatoes but for our Restaurant use we dont... hope that helps... stay Blessed
HI Tyson, you can add sugar to cut acid from tomato sauce but because we use so much carrots it helps to cut the acidity of the stew... but either way can do... Stay Blessed... Aloha!
