The tastiest Peanut Butter Stew / sauce - Senegalese, Mali, Gambia inspired Mafe’ || Maafe’

    INGREDIENTS: • whole duck butchered, seasoned with salt and pepper
    • 2-3 tbsp Cooking oil for searing duck
    • 2 red onions chopped and cooked in rendered duck fat
    • Add 1 heaping tbsp tomato paste to cooked onions and cook for 3-5 mins
    • Stew base blend of 4 scallions, 3 garlic cloves, 1 scotch bonnet, 1 tbsp ginger paste, 1 tsp rosemary, handful flat leaf parsley, 1 red bell pepper, 2 Roma tomatoes. Add this blend to onions and tomato paste, and cook on medium heat till oil resurfaces.
    • Add 1/2 tbsp curry powder
    • 1/2 cup roasted peanut butter, thinned up with 4 tbsp hot water. Add to stew base, stir to evenly combine.
    • Add 1 tbsp each shrimp powder, and all purpose seasoning. Substitute all purpose seasoning with 1 chicken bouillon cube
    • Add seared duck and all of its juices to stew.
    • Season with salt to taste
    • Add 500 ml hot water to pot, stir, and cook on low heat, with lid on, for 25 mins.
    • Add the following fresh vegetables: 1/2 a small green cabbage cut in to two, 1/2 each green and yellow bell peppers, small sweet potato, and russet potatoes, carrots, onions cut into wedges, and some habaneros. Key is to cut all your veggies into big chunks, in order to keep their shapes, and have the perfect texture for the final show stopping presentation!

    I'm cooking your recipe right now as we speak. I used to have Kenyan and Nigerian hair clients, and the food they prepared (I braided hair in their home) was hands down some of the best food I've ever had. We don't have many west African restaurants where I live so I truly appreciate your authentic recipe! Smells delicious. Can't wait!

    You have no idea what this recipe means to me!! I will forever sing your praises!
    I fell in love with peanut soup years ago when I fell in love with my son’s father. Unfortunately we split and I no longer had my favorite meal at my fingertips. Over the years I made other African friends who cooked it for me and guided me through making it myself. However when left to make it on my own at home alone it always was a disaster that went directly down the drain! Taking notes, pictures, searching online and nothing! No success. This week I even considered contacting an ex just to request some 😬. I decided to search TH-cam one last time and I must have been guided by the ancestors because I came across yours. I watched the video over and over just to make sure I could follow with confidence and ease. Your recipe and guidance was perfect. Even down to the cleaning the sides of the pot. The soup came out beautifully and I thank you for sharing! Many blessings to you!

    We have similar dish here in the Philippines, its ox tail peanut stew we call it kare kare. That looks really really delicious 😍😍😍

      This soup looks so good, my husband has promised me he would make some he is from Nigeria. I keep peanut butter and nuts in the house could we use the all Natural Peanut butter or ground peanuts to make this soup? We have a can of some supper hot and spicy peanuts.

    I was born in Sudan to missionary parents. Peanuts was the staple food of Logutuk, the village we lived near.
    My favorite place was among the harvested peanuts. We moved to the States when I turned 5 and unfortunately never returned to Africa. The only recipe I've kept using is basically creaming spinach with chunky peanut butter. It's as close a flavor as I can get to something I used to eat as a child.
    So I am thrilled to find you on TH-cam and hopefully brave enough to try making this! I've made some other stir fry recipes of yours with great success! Thank you for your delightful channel!

      You have not had Ethiopian,Malawi fish, South Africa biltong or boerwors and many other dishes found all over Africa.I think Senegalese food is the best from that part of the world.

    Your recipes always look divine and your directions are very straightforward which I appreciate very much. I grew up with friends from different parts of Africa and I swear each country has similar recipes but a different name for the same dishes. My Gambian friends would call this peanut stew my Salone friends would call this groundnut stew, this looks delicious!

    Love this!..so similar to a dish called Kare Kare from where I come from,The Philippines..We use Ox tails and tripe, roasted peanuts and ground rice for texture..eggplants, banana hearts, snake beans, bokchoy, bell peppers and chilis for veggies..I'll try a fusion of this and the recipe I'm familiar with!..Nice dish!..great channel..👍❤

    Oh oh oh oh oh!! I knew one day, if anyone was going to decipher this dilemma of mine, it would be sister madam, the food miracle worker oooo!!!! Thank you sis! All this cheering, even with tears 😂😂to say, several years ago, my very model gorgeous Malian friend who used to braid my hair, in ited me to stay and eat dinner with them after 8hrs of hair braiding marathon. U know we Ghanaians, a bit squeamish, with our "stuck up" attitude about eating in someone's house, but I was starving, and I love her so much, so I swallowed my foolishness and went to the kitchen with her to scoop the food! Kw3, meni sane N3!(in Ga by the way). That kitchen smells so good, I started salivating right away, sight unseen! I knew it was going to be good! I thought we were the only ones who knew or ate palm nut soup! I just dont want to bore u with my storytelling skills, so short here, with rice, I lost my ever loving mind! So good, so good, so good! I knew it was soup, becos it wasn't soup consistency, quite thicker, still puzzled about the palm nut thing, even tho it tasted exactly like that, but stew thickness,,I shamefully took some home, with some flimsy excuse about why in taking some home..Hahaha Hahaha! Enyito s3m kwa!(this time in fanti, your tongue) I wanted to ask her for recipe so badly, the fragrance alone has been stuck in my sinuses forever! Now, I think u solved my dilemma! It's so good that I have an open mind about almost everything,,,I would've missed out on such a good thing, and u would've missed out on this lengthy experience of mine! Love u sis! I was just waiting for u to start dancing again! 🤦‍♀️🤦‍♀️

    Omg. Made this with chicken and it was divine. It was my first time ever using a scotch bonnet so I was afraid of it - I tasted the blended paste raw, and decided to use 2/3 while cooking since it was so strong. For anyone else that’s afraid of the scotch bonnet: DON'T BE! It actually came out very mild. I used a large scotch bonnet and took some of the seeds out since it was my first time, and there was SUCH a difference between raw and cooked. Cooked had only a little gentle heat. I definitely could have used all of the paste. I will figure out another use for that little bit of leftover paste. It is magic. Thank you for the recipe!! I will definitely make this again!!

      the peanut sauce was surprisingly savory, not peanut tasting at all. My brother in law is Senegalese which is where this dish originates and he came down to the kitchen and was amazed at my attempt at mafe. He did say next time to use less peanut butter, like keep it down to a quarter cup or less because the sauce thickens as it cooks but even the kids ate is so it was a great success. But the most important thing I learned is that Senegalese Mafe is meant to be real mild, so no hot peppers at all in the preparation, the hot peppers were only for simmering in the sauce at the end, unbroken.

    After eating Peanut Butter Stew a few years ago, I've searched for a simple but delicious recipe, this is it!
    I can hardly wait to make it, although I'm substituting duck for chicken.
    Although rich, this stew is delicious, a West African former neighbor introduced me to this, I absolutely loved it!
