    Looks delicious. This may be just cultural but in my country (Côte d’Ivoire ) okra soup is never made with any fresh protein. The meat and fish is always dry or smoked and also there are no tomatoes cause it cuts out the slime. Nice to see all preparations of okra soup here on TH-cam. I have tried one from Nigeria with ogbono and it was delicious.

      Yes but in Ghana we add fresh or dried proteins that is how we make our okra stew or stew try it and it won't cut the slimy texture of the okra just make sure your tomatoes are well cooked that's all you need

      True about the tomatoes. Although cooking the tomatoes all the way wont cut the slime. And the tomatoes usually give it an additional favor.

      Also in Nigeria, we cook okra mixture with dry fish and, dry shrimp and iru-ogiri( Nigeria local name ).

      Basically any form of acidity takes the slime away...I use lemon/lime or vinger to eliminate slime when I make simple stir fried okra.

    Hi! I have some questions since i am not super familiar with Ghanaian cooking but I want to try this recipe! Are the cured proteins something I need to make homemade like you did, or can they be purchased from a store? Are there any substitutes if I can't find it or don't have time to make it? Also, some of my family doesn't like fish bones-- are they noticeable in the tilapia or could I use fillets instead? This recipe looks amazing :)) I hope you see this even though it is a bit late!

      You may purchase the cured proteins from the African store. The cured fish may be substituted with 1 tsp fish sauce, or completely omitted. You may use Tilapia filet.

    Nana, can you show us how you make your all purpose seasoning!!! I rarely see you use any kind of maggie ( I am from the Ivory Coast) and you know! lol there are no cooking without maggie of some kind lol. Here in the USA they cost so much and they are not healthy anyways!!!!

    The okra gives it such a strange consistency. Like really thick sticky slime. The mix of textures would be very interesting. Love to try this dish.

    Don't throw the bell paper seeds. They good for you just like other seeds of okora, tomatoes etc.

    i love your recipe, but i always cut the okra slime when i cook okra , the slime for me is a no no
