White sauce(Béchamel) first: 100g unsalted butter, melt in a pot add 80g of flower, mix Add 1L of milk, mix well, stir long Add 100g of parmesan cheese(stirred), mix Add 2 pinches of salt Add pepper Grate quarter of a nutmeg Cook until its getting thick. For lasagne you need: -500g of lasagne sheets Need about 1 deep bowl of Ragu 2 large soft balls of Mozzarella cheese Grated parmesan For lasagne layers: Put Ragu on the bottom of lasagne cooking pan Cover with lasagne sheet, put Ragu on the sheet, put white sauce, put pieces of Mozzarella and grate Parmesan cheese, cover with lasagne sheet; repeat until go up to the end of lasagne pan. Put in the oven 180C for 35-45 minutes
I always add some Colman's English mustard to a cheese sauce - obviously it's not authentic Italian that way, but it really adds to the cheese flavour... I would add nutmeg to a bechamel (white sauce) but not to a cheese sauce, personally.
This recipe came out 7 years ago when I was 17. I've been using it since then but stopped cooking during college. Today, I come back to cook it once again. Timeless recipe!

For my fellow American viewers, I weighed out the items to convert from metric weight to cups. It's not exact, but I was within a few grams on each measurement. It was close enough to taste as good as Gennaro is claiming: 1/2 Cup of Butter 1 Cup of Flour 4 Cups of Milk 1 Cup of Parmesan Cheese Also, I made a 1/4 recipe and I had enough to make a whole lasagna with none leftover.
I love watching Gennaro cook. It's like a magic trick watching him lovingly put things together. I'm sure if i tried to put the same things together i would end up with something quite different.
I can never understand how store bought lasagne layers perfectly, and seems to be choreographed in its preparation. Some of the best lasagnes ive made came from the oven bubbling and bending into all kinds of shapes, not looking like layers of stainless steel separated by meat and cheese. All heck I might as well admit it that since I am born and raised dye in the wool south eastern USA we folk eat anything that tastes good and properly seasoned and cooked well. Not matter what culture the cuisine came from. Being that USA Southern cuisine is a mix of several cultural foods and ingredients that says a lot about what we will eat if it tastes good. One last thing as a personal note to Jamie Oliver. I have great respect for people who honor their elders and mentors and it is very honorable that you pushed your mentor Gennaro Contaldo to the forefront like you have. It's a show of respect to who instilled a passion in you for Italian cooking.
This is the best lasagne recipe I've ever tried, it freezes extremely well and tastes even better when reheated after defrosting. The tip with the aluminium foil makes such a difference in cooking the pasta evenly. Thank you so much Gennaro and Jamie!
I've made this dish TWICE now and each time it was a HIT at my dinner table. I've made a beschamel before for a French fish dish, but never before in a Lasagne, it was so flavorful, and his technique was so easy to follow. Also added small slices from a Grana Padano rind to the beschamel, and in the Ragu and later infused it in the dish as it baked.
Finally someone who makes their lasagna the way my Mom did, she found this recipe in a magazine she told me and she made it and it's a big part of our family history. Once you have it this way, you would never go back to ricotta or cottage cheese. This is the best! I just made some the other day. Loved your video!
maybe you can help me since I didn't understand something: His family ragu is made with big chunks of meat. So i couldn't understand if he simply used only the tomato sauce or he grind the meat and also put it in the lasagne.

Real story I swear to god I’m not kidding. I used to work in an opticians years ago. Gennaro walked in and took a seat in the waiting area for an eye test. I went up to him and was in in shock I couldn’t believe he’s right in front of me. Had a brief conversation with him and he wasn’t too happy because he had to wait ages for an eye test. I got him seen straight away as I was close to the optometrist at the time. He hands me over a Tupperware and tells me it’s the best chicken you’ll ever have in your life. Devoured that for lunch that day haha. 2017 good times

uhm. where to start? besciamella looks good. mozzarella is not ideal on this dish, too much liquid. the ragù looks good but he made it differently in his previous video (and i didn't like the way he made it) so i think he didn't make the ragù this time. i think it's better to make pasta on your own. it's kinda difficult to make and you need a pasta machine or a LOT of patience. the pasta must be made some 10 hours before because it needs to get dry. and the dish was overcooked a little. lasagna is a lovely dish really liked in all northen italy, but it's kinda complex, requires really good ingredients and a long preparation.
He's one of the few cooks that I watch for the person and not the food.

I tried it a few months ago and the family loved it. So they have asked me to make it again.
So nice! I love Genaro and his cooking, he looks like such a wonderful person, totally the Italia that I dream about.
and i just made Lasagne today... now I feel stupid because this one looks way cooler !

I love watching Italians cook they get so passionate about food but then again who wouldn't
uhm. where to start? besciamella looks good. mozzarella is not ideal on this dish, too much liquid. the ragù looks good but he made it differently in his previous video (and i didn't like the way he made it) so i think he didn't make the ragù this time. i think it's better to make pasta on your own. it's kinda difficult to make and you need a pasta machine or a LOT of patience. the pasta must be made some 10 hours before because it needs to get dry. and the dish was overcooked a little.
lasagna is a lovely dish really liked in all northen italy, but it's kinda complex, requires really good ingredients and a long preparation.
And it needs to cool down or it falls apart (some thing he did'nt do)
