Last Saturday I made pasta Bianco, following the recipe Jamie gives with a food processor without a pasta machine. I must confess it was not very easy to work on it during 10 minutes, but it the meal was absolutely fantastic. And of course I will try these meatballs next Wednesday after coming back from the street market with all those fresh products, like celery, carrots, basil and parsley. This reminds me of a time some years ago, I had to go to a home change service this man's Corvette windshield. He offered me lunch, which I initially turned down, but he insisted. A little while later, his mother came out with a platter and a beautifully homemade meatball sub! She was VERY Italian. She had the very thick accent, like Gennaro! I had to return later to service her car also, and I was met with a carafe of wonderful coffee and a tray of Italian pastries for breakfast. They never let me leave without thrusting a bottle of wine into my hands! Gennaro's recipe gives me some ideas to tweak me own meatball recipe!

Ahaha I am Italian born and raised in the south of Italy and having lived in Toronto for about two years and having had the opportunity to meet many Americans Italian I can pretty much say you guys are very much different than us, and you do also cook very differently than we do. But hey big plus one to this guy right here, always makes me smile and remember the lovely time I had in Toronto.
This recipe is epic, the sauce and meatballs are great, they go well with pasta too. I found that the sauce and meatball is even tastier if you gently cook for a couple of hours, and the next day, well the sauce has tiny tiny parts of meatball in it and the flavour is just great, I'm eating a bowl of it now with meatballs/mozarella + tagliatelle WOW !! Save some for the next day, you won't be disappointed :)
Just use a pan Taylor Moser I take it out and put in plastic container in the fridge overnight, it's nicer the next day :) it even freezes pretty good too :)
+Taylor Moser make sure it is a heavy based pan otherwise the sauce will burn on the bottom, the crockpot would also work as it offers low consistent heat. 😊 my fav is with fetaccini pasta or with mashed potatoes.
Season the meat then cover the bowl the meat is in. Refrigerate for 16 to 24 hours, then make your meatballs and they will taste incredible from the seasonings in the meat.
we made this the other day, OMG the best meatball subs we ever had, and we had so much sauce left over that I made pasta with it, OMG no joke, the best pasta we have ever had, I added sausage we had to it, and lots of parmesan, seriously, you will never go to an italian restaurant again if you make this!!

This is the real Southern Italy cooking. You can easly find this dish on Sunday, when the family gathers to have lunch together. The tomato sauce itself is one of the best complements for thick-like pasta, with some Parmesan cheese on top. I'm kinda glad to see that it's appreciated outside our country :)

I didn't know what it was, either. And we may be Americans, but let's try to forgive ourselves. LOL Things are known by different names in different countries. But I agree, it's the real deal. I grew up in Boston where subs like this were made at home all the time - or sold in the "mom and pop" sub shops. There was one place who is famous for their meatballs subs and one of the "secret ingredients" was minced carrots in the meatballs, but like Gennaro, they were blended in so you didn't know they were there. :)

We call it 'roquette' in France, but Google tells me it is 'arugula' in English. You're right! :)
