I remember my grandma cooking her sauce like this. Except for the p/r rind, and the San marzano tomato’s. She used the carrot and tomatoes from our humongous garden. Thank you!!!! Right now, we have a small garden at my parents house (right down the road from us), we are finally finished with construction in our yard so we will start gardens maybe in the fall. But we have tomatoes, zucchini, and eggplant at my mom's, who is an amazing gardener. I need to learn her ways :)
Hi Bethany Firstly what an amazing idea adding zucchini (courgette here in the UK) to add moisture, there is nothing worse than a dry meatball. Iv never made chicken meatballs before but i shall this week. I will defiantly be making your sauce to go with these not a store bought one. I will make a Greek salad to go with these on Saturday. Why Saturday you may ask, its as her that most be obeyed (The mother in law) has TOLD us she is coming to dinner. In my humble opinion roasted Garlic changes the taste in the wrong direction, strange i know as roasting pine nuts, and dried spices ups the flavour. Chris (In UK)
You could certainly try! Some people don't the raw garlic taste, so a light roast could work. But I also get where Chris is coming from, it could potentially not work. But I think it might be worth a try! Would be interested to hear it if you do try it :)

So, if you leave the zucchini out, you might be better off making these chicken meatballs asimplepalate.com/blog/baked-italian-chicken-meatballs/ (I use ricotta cheese in them like my Italian meatballs). And then assemble them in the sauce and cheese, and bake like this recipe!
I use the real deal Parmigiano Reggiano (that's the brand lol) - I get it at Costco which has the best price for it. I've seen it more available at local grocery stores too! It has the authentic seal on the rind. :)
That's actually something I don't know. I buy mine local from a market so it doesn't have a description. But from what I've read online it's a mixture of dark and light meat but also sometimes it can just be breast. If I were to make it I would do mostly thighs and some breast!
