Crock Pot Garbanzo Bean Soup

Great recipe!! Easy, relatively quick and delicious. Very healthful as well. This recipe goes into the Crock Pot for 3 hours and comes out perfect every time. My recipe is totally open to your interpretation to add ingredients for flavors you really like, so don't be afraid to experiment with it. It's very versatile..
The recipe is the basis for several other soups using other types of beans and I will be uploading some of them shortly, so stay tuned. I will probably do a black bean variation next.
RECIPE:
Ingredients:
1 Cup dried, rinsed garbanzo beans (Chic Peas)
3 Cups chicken stock (or water if you prefer)
2 or 3 small unpeeled red potatoes - cubed
1 Stalk celery - cubed
5 or 6 carrot slices
1 Teaspoon onion flakes (or fresh onion if you prefer)
1 Teaspoon turmeric
1 Teaspoon salt
1 Teaspoon fresh cracked pepper
1 Teaspoon Italian seasoning
1 Sprig fresh rosemary (optional)
2 Sprigs fresh Thyme (optional)
Directions:
Place all ingredients except chicken stock into the pot. Then, slowly pour in the stock making sure you don't overflow the pot. Remember, a little bit of volume will be taken up as the beans absorb water and re-hydrate.
Check after 2 1/2 hours and test beans for doneness. If soft enough, remove from the heat. If you want them softer, continue cooking for an additional 1/2 hour or so until they are as you like them.
