Hi Mary, I made this salty sweet granola bar and I am very pleased. Didn't have salted nuts but included some salt and would make many more batches. This sounds so good. In India we use jaggery as sweetener and also for binding similar kind of sweet snacks. Thanks for sharing. I will hunt for old style oats now😋😎😍

I'm going to try these using the date sugar and I might use peanut butter instead of coconut oil or at least half of it..... my add ins will be coconut and perhaps some dried raspberries.... I would like to try some also with adding in some of the crushed up chocolate bar you mentioned..... my friends and I found one that has espresso in it and it is to die for (and I'm not even a chocoholic!!!) I think it would also be fun to play around with the extracts like maybe use anise extract or almond extract or even coconut or peppermint extract around Christmas.... the nuts might be sunflower seeds for me with almonds or walnuts.... what a great fun versatile recipe that is Pregnant with Possibilities! Mary great recipe 👍but not crazy about the sugar, think I'll leave it out ,! Might add some cinnamon instead and the cranberries and I love adding chia seeds too

Thank you so much yet again for an excellent video. Both of this as well as the granola for yogurt or anything else topping wise, is exactly what I was looking for when I went looking online. I've gotten to the point now where I'm actually looking for your videos specifically and your take on this. Not only is there not extra sugars, but it helps me keep my calorie count, as well as being delicious. I will be in Texas come February if possible I would love to cook something with you in the kitchen, anything.
Thanks for sharing. I love cranberry and tropical fruit snack mixes. My favorite nuts are Brazil ones. Think I'll save chocolate for cooler weather as it's messy to eat in warmer weather. We usually snack since I prefer to cook low and slow and often am side tracked so meals may be delayed.

So thankful I found your channel. My baby girl is listed for a kidney transplant & we have to stay away from processed food. She loves sweet & salty snack bars. We are making these tomorrow after I get to the grocery store. Thank you so much for doing this. Edit: I forgot to mention we live in Oklahoma & she is getting her transplant at Cook Children's Hospital in Fort Worth, Texas so these can go with us. At least 2 weeks in the fridge if wrapped well. But can be left for a few days unrefrigerated also, if wrapped well. Bake a bit longer if you want them to be firm and crunchy. I have tried to make bone broth after one of your videos & or was gelatinous then I went straight to the dehydrator & that was a hugh failure. I just recently bought a dehydrator & instant pot. I cooked the broth over night & in the morning put the cold gelatinous broth in my dehydrator on 135 degrees & after about 5 minutes it just started pouring out all over the place. I had more since I only have 2 of the fruit trays & I tried it again. This time I put the temp on 95 degrees with the same messy results. I had to explain bone broth to my daughter & how healthy it is. She's so funny. I know she was thinking of I can't cook meatloaf or fried chicken (I really can't cook those) why do I think I can make dehydrated bone broth.

Hi Mary, i just love your channel. Its so informative and I've learned quite a things from you. However, i wanted to ask how i would incorporate peanut butter into the recipe as my husband loves peanut butter granola bars.
That’s a great idea. I will have to experiment with that. I have seen some folks who make granola bars that are a no bake version and they use peanut butter to hold it all together. I gather they refrigerate them and then eat them cold. But in terms of baking with the peanut butter I would think you could mix some in peanut butter and use peanuts and then bake it. I made granola once and no one in my family really liked the flavor combination I used so I never made it again, but I'm thinking this would be perfect for tossing onto yogurt or just as a trail mix type of snack. Hi "Mia", Thank you so much for visiting. And yes, you can certainly turn this into a granola. As to how long in the oven, you'll want to experiment at first. Bake it for about 15 minutes, then open the oven and shake the trays. Check and see how it is doing. Then bake it for another 5-15 minutes until is is a nice golden brown and crisp. @@MarysNest Thanks for the info Mary! I do enjoy trying to do more make-it-yourself versions of things I used to buy in the store. I make a lot of my own spice blends and various other things. I try to avoid processed foods as much as possible but the flavors we are used to come from the processed versions and it isn't always easy. Still haven't found a mac 'n cheese that my husband doesn't say 'it's not the same' when he tries it, but that doesn't mean I've given up hope either. One day he'll either just say "OK FINE! It's a winner, now can you stop!" lol... I'll definitely check out those playlists! :D

Hi Velina, Great question! Hmmm...not 100% sure. Every oven is different. Maybe a little lest baking time? Or maybe just add a bit more coconut oil or honey to help things stick together better. Maybe start with an extra tablespoon of each. Love, Mary

I just found this recipe and it looks delicious! I do have a question...the video mentions 325 degrees, but the printed recipe says 350 degrees. I think I'll try the 325 first. I'm hoping to add cranberry and coconut to mine. :-)

Hi again. I just asked a question on your Soaked oatmeal video, I am interested in a baked breakfast bar but I would like to soak the oats, nuts and the seeds. Do you have any ideas ? Thanks your videos are a great help !!
Thank you for visiting again! This is a great question. You can soak the nuts and seeds ahead of time and then dry them and then mix them into the breakfast bar recipe but soaking the oats is trickier. If you are using the flaked oats you can buy those from the Sprouted Flour Company where they have been soaked, sprouted, flaked and dried. But if you are doing this at home, it is difficult because you need a special machine to flake the oat groats. Now, that said, if you want to make a breakfast "bar" where you soak the flaked oats, nuts, and seeds together, it's best to make Baked Oatmeal. I do not have a video on this - yet - but what you do is soak your oats (flaked, steel-cut, or groats) along with your nuts and seeds, and then bake it in the oven at 350 degrees for about 30 minutes. If you wish, you can add a sweetener of choice (and - if you tolerate eggs - you can add in a few beaten eggs). This will not create a firm breakfast bar but more like a cake that you can cut into squares for easy transport. Hope this helps. Love, Mary

As to soaking the nuts and seeds ahead of time - I meant that you could do that as a separate step and mix them into the oats to make traditional granola bars. The only draw back with that is that the oats would not be soaked (unless you bought soaked and sprouted oats that had been dried for you from a company like To Your Health Sprouted Flour). So sorry I was not clear. It can be hard to explain things sometimes in writing. If you wanted to do that, you could dry the nuts and sees in a dehydrator (110F is best to keep them as a living food) or the oven (lowest temp possible if in the oven). But if you are going to bake them, you can dry them in the oven. You do not need to keep them a living food in that case since they will go on to be baked. Keeping them as a living food is best when the nuts and seeds will be used as a snack. I show you how to do all of this here: th-cam.com/video/xASGADS9B-Q/w-d-xo.html But if you want to make something that involved soaking the oats yourself, I would mix the nuts, seeds, and oats in a bowl with water, then cover it, and then prepare the mixture for baking the next day. When you make "baked oatmeal" as it is called, it is more like a cake as opposed to a bar but equally delicious. I think I should do a video on that! You have inspired me!! As to freezing - that is an excellent question. I am not sure. I have never tried freezing bake oatmeal. I will have to try it and see how it does. I'll keep you posted. Unfortunately, those don't work in these type of granola bars. But steel cut oats make great oatmeal - especially if you toast them in the oven before mixing them with water to cook. Do you soak your steel cut oats overnight? Love, Mary
Mary, my bars came out a little dry and brittle and would not stay in bar form. Any advice? My mixer did seem a little dry as well. Do I need more fat next time? I did halve it, but I followed the measurements. (1/6 cup coconut oil, 1/6 cup honey, etc.). I did end up adding a touch more honey because of the dryness

Hi, if you swap out honey for maple syrup is it a 1-2-1 swap? Can you do a mix of both honey and maple syrup? On a side note, how do you join the Facebook group, I did request to join but didn’t hear back?
H2Dwoat - Yes, you can use honey and maple syrup and it would be exactly the same amount. You can use one or the other or a mix of the two. Oh dear! Hey Mary! I made these for my son, and I ran into some hiccups; my first batch completely burned, and the second batch was still burned around the edges. I think the main issue is that my oven temperature is off(in the six years I've lived here, it was the first time I used it lol). I ordered an oven thermometer, and I'm planning to try it again when I get it), but I wanted to check a couple things to see if anything else I did exacerbated the problem. 1) I put it on the center rack(I have a gas stove ) 2) the only coconut oil I had on hand was one with natural butter flavor added. I also noticed that the parchment paper got pretty brown. Could it be the type of parchment paper I used? Any insight would be greatly appreciated! As always, thank you! ~Mary(that's my name too...)
So sorry to hear this!! But yes, I think monitoring the temp or your oven to get an exact read is a good idea. You might have to lower the temp and/or move your baking sheet to a higher rack. And yes - I suspect that the butter in the coconut oil blend may be leading to the burning. As to the parchment paper...hmmmm...I once had a brand that was natural in color and it always burned on me...so I am thinking that some brands may be more inclined to do this than others. Keep me posted and we will continue to diagnose problems together. Love, Mary
@@MarysNest i also want to say that the parts t hat didn't burn on the second batch were wonderful. My son and his girlfriend LOVED them. His girlfriend kept commenting on how good they were, without being "sickeningly sweet " like most store-bought brands. They were a hit!
hi Mary, i don't know if you will see this comment because this is an older video, but i have a question. The oats you use here are not soaked. I have made granola bars many times, and i have no idea how one would make them with soaked oats. so does the baking or roasting help with the digestibility of the oats? maybe not as much as soaking would, but a little? I have to try your recipe. when i make mine, i actually toast the oats and nuts first, then add the fat/sugar mixture, and then press into the pan and let cool in the fridge. do you think that toasting would help the oats since they are not soaked? thanks in advance. i've been on a nourishing traditions kick, so i think about recipes a little differently than usual, so i'm curious what you think! thank you!
Hi Kelly, another option is to use sprouted old-fashioned oats. If you live near a Costco, they sell sprouted rolled oats. But yes, I think toasting them will help. But you gave me a great idea to see if a soaked old-fashioned rolled oats recipe for crunchy granola bars would work. Stay tuned. Love, Mary ❤️🤗❤️

I read a few articles, and both cocoa trees and the orchids that vanilla grows on have become so large and monocultures that they both have diseases. That is why both have become so expensive.
Can you add medicinal herbs into them. Like adding adaptogens to them? For extra oopmf? If so, at what percentage of herbs would be effective in the bar?

Hi Mary, I made this salty sweet granola bar and I am very pleased. Didn't have salted nuts but included some salt and would make many more batches. I'm going to try these using the date sugar and I might use peanut butter instead of coconut oil or at least half of it..... my add ins will be coconut and perhaps some dried raspberries.... I would like to try some also with adding in some of the crushed up chocolate bar you mentioned..... my friends and I found one that has espresso in it and it is to die for (and I'm not even a chocoholic!!!) I think it would also be fun to play around with the extracts like maybe use anise extract or almond extract or even coconut or peppermint extract around Christmas.... the nuts might be sunflower seeds for me with almonds or walnuts.... what a great fun versatile recipe that is Pregnant with Possibilities! Thank you so much yet again for an excellent video. Both of this as well as the granola for yogurt or anything else topping wise, is exactly what I was looking for when I went looking online. I've gotten to the point now where I'm actually looking for your videos specifically and your take on this. Not only is there not extra sugars, but it helps me keep my calorie count, as well as being delicious.

Thanks for sharing. I love cranberry and tropical fruit snack mixes. My favorite nuts are Brazil ones. Think I'll save chocolate for cooler weather as it's messy to eat in warmer weather. We usually snack since I prefer to cook low and slow and often am side tracked so meals may be delayed.

So thankful I found your channel. My baby girl is listed for a kidney transplant & we have to stay away from processed food. She loves sweet & salty snack bars. We are making these tomorrow after I get to the grocery store. Thank you so much for doing this.
Edit: I forgot to mention we live in Oklahoma & she is getting her transplant at Cook Children's Hospital in Fort Worth, Texas so these can go with us. Do you know how long they can stay good & do I need to refrigerate them. Again thank you

At least 2 weeks in the fridge if wrapped well. But can be left for a few days unrefrigerated also, if wrapped well. Bake a bit longer if you want them to be firm and crunchy. I have tried to make bone broth after one of your videos & or was gelatinous then I went straight to the dehydrator & that was a hugh failure. I just recently bought a dehydrator & instant pot. I will be watching you faithfully everyday. I cooked the broth over night & in the morning put the cold gelatinous broth in my dehydrator on 135 degrees & after about 5 minutes it just started pouring out all over the place. I had more since I only have 2 of the fruit trays & I tried it again. This time I put the temp on 95 degrees with the same messy results. I had to explain bone broth to my daughter & how healthy it is. She's so funny. I know she was thinking of I can't cook meatloaf or fried chicken (I really can't cook those) why do I think I can make dehydrated bone broth.

Hi Mary, i just love your channel. Its so informative and I've learned quite a things from you. However, i wanted to ask how i would incorporate peanut butter into the recipe as my husband loves peanut butter granola bars.
That’s a great idea. I will have to experiment with that. I have seen some folks who make granola bars that are a no bake version and they use peanut butter to hold it all together. I gather they refrigerate them and then eat them cold. But in terms of baking with the peanut butter I would think you could mix some in peanut butter and use peanuts and then bake it. Great looking recipe Mary! Thanks!! I am wondering if I wanted to use this but instead of bars, make granola, how long would that need to be in the oven? I made granola once and no one in my family really liked the flavor combination I used so I never made it again, but I'm thinking this would be perfect for tossing onto yogurt or just as a trail mix type of snack.

Hi "Mia", Thank you so much for visiting. And yes, you can certainly turn this into a granola. As to how long in the oven, you'll want to experiment at first. Bake it for about 15 minutes, then open the oven and shake the trays. Check and see how it is doing. Then bake it for another 5-15 minutes until is is a nice golden brown and crisp. @@MarysNest Thanks for the info Mary! I do enjoy trying to do more make-it-yourself versions of things I used to buy in the store. I make a lot of my own spice blends and various other things. I try to avoid processed foods as much as possible but the flavors we are used to come from the processed versions and it isn't always easy. Still haven't found a mac 'n cheese that my husband doesn't say 'it's not the same' when he tries it, but that doesn't mean I've given up hope either. One day he'll either just say "OK FINE! It's a winner, now can you stop!" lol...

Hi Velina, Great question! Hmmm...not 100% sure. Every oven is different. Maybe a little lest baking time? Or maybe just add a bit more coconut oil or honey to help things stick together better. Maybe start with an extra tablespoon of each. Love, Mary

I just found this recipe and it looks delicious! I do have a question...the video mentions 325 degrees, but the printed recipe says 350 degrees. I think I'll try the 325 first. I'm hoping to add cranberry and coconut to mine. :-)

Hi again. I just asked a question on your Soaked oatmeal video, I am interested in a baked breakfast bar but I would like to soak the oats, nuts and the seeds. Do you have any ideas ? Thanks your videos are a great help !!
Thank you for visiting again! This is a great question. You can soak the nuts and seeds ahead of time and then dry them and then mix them into the breakfast bar recipe but soaking the oats is trickier. If you are using the flaked oats you can buy those from the Sprouted Flour Company where they have been soaked, sprouted, flaked and dried. But if you are doing this at home, it is difficult because you need a special machine to flake the oat groats. Now, that said, if you want to make a breakfast "bar" where you soak the flaked oats, nuts, and seeds together, it's best to make Baked Oatmeal. I do not have a video on this - yet - but what you do is soak your oats (flaked, steel-cut, or groats) along with your nuts and seeds, and then bake it in the oven at 350 degrees for about 30 minutes. If you wish, you can add a sweetener of choice (and - if you tolerate eggs - you can add in a few beaten eggs). This will not create a firm breakfast bar but more like a cake that you can cut into squares for easy transport. Hope this helps. Love, Mary

As to soaking the nuts and seeds ahead of time - I meant that you could do that as a separate step and mix them into the oats to make traditional granola bars. The only draw back with that is that the oats would not be soaked (unless you bought soaked and sprouted oats that had been dried for you from a company like To Your Health Sprouted Flour). So sorry I was not clear. It can be hard to explain things sometimes in writing. If you wanted to do that, you could dry the nuts and sees in a dehydrator (110F is best to keep them as a living food) or the oven (lowest temp possible if in the oven). But if you are going to bake them, you can dry them in the oven. You do not need to keep them a living food in that case since they will go on to be baked. Keeping them as a living food is best when the nuts and seeds will be used as a snack. I show you how to do all of this here: th-cam.com/video/xASGADS9B-Q/w-d-xo.html But if you want to make something that involved soaking the oats yourself, I would mix the nuts, seeds, and oats in a bowl with water, then cover it, and then prepare the mixture for baking the next day. When you make "baked oatmeal" as it is called, it is more like a cake as opposed to a bar but equally delicious. I think I should do a video on that! You have inspired me!! As to freezing - that is an excellent question. I am not sure. I have never tried freezing bake oatmeal. I will have to try it and see how it does. I'll keep you posted. Unfortunately, those don't work in these type of granola bars. But steel cut oats make great oatmeal - especially if you toast them in the oven before mixing them with water to cook. Do you soak your steel cut oats overnight? Love, Mary
Mary, my bars came out a little dry and brittle and would not stay in bar form. Any advice? My mixer did seem a little dry as well. Do I need more fat next time? I did halve it, but I followed the measurements. (1/6 cup coconut oil, 1/6 cup honey, etc.). I did end up adding a touch more honey because of the dryness

Hey Mary! I made these for my son, and I ran into some hiccups; my first batch completely burned, and the second batch was still burned around the edges. I think the main issue is that my oven temperature is off(in the six years I've lived here, it was the first time I used it lol). I ordered an oven thermometer, and I'm planning to try it again when I get it), but I wanted to check a couple things to see if anything else I did exacerbated the problem.
1) I put it on the center rack(I have a gas stove )
2) the only coconut oil I had on hand was one with natural butter flavor added.
I also noticed that the parchment paper got pretty brown. Could it be the type of parchment paper I used? Any insight would be greatly appreciated! As always, thank you! ~Mary(that's my name too...)
So sorry to hear this!! But yes, I think monitoring the temp or your oven to get an exact read is a good idea. You might have to lower the temp and/or move your baking sheet to a higher rack. And yes - I suspect that the butter in the coconut oil blend may be leading to the burning. As to the parchment paper...hmmmm...I once had a brand that was natural in color and it always burned on me...so I am thinking that some brands may be more inclined to do this than others. @@MarysNest i also want to say that the parts t hat didn't burn on the second batch were wonderful. My son and his girlfriend LOVED them. His girlfriend kept commenting on how good they were, without being "sickeningly sweet " like most store-bought brands. They were a hit!

hi Mary, i don't know if you will see this comment because this is an older video, but i have a question. The oats you use here are not soaked. I have made granola bars many times, and i have no idea how one would make them with soaked oats. so does the baking or roasting help with the digestibility of the oats? maybe not as much as soaking would, but a little? I have to try your recipe. when i make mine, i actually toast the oats and nuts first, then add the fat/sugar mixture, and then press into the pan and let cool in the fridge. do you think that toasting would help the oats since they are not soaked? thanks in advance. i've been on a nourishing traditions kick, so i think about recipes a little differently than usual, so i'm curious what you think! thank you!
Hi Kelly, another option is to use sprouted old-fashioned oats. If you live near a Costco, they sell sprouted rolled oats. But yes, I think toasting them will help. I read a few articles, and both cocoa trees and the orchids that vanilla grows on have become so large and monocultures that they both have diseases. That is why both have become so expensive.
