Proud to see a Belgian treat on a British TH-cam channel, and yes here in Belgium we call them speculoos and there are more than 1000 different varieties

I fell asleep watching this video and I have to admit that I have fallen asleep watching your videos about 5 times haha. Its not that that youre boring but after a long day at work where I was up very early I sit down and watch TH-cam and when I start watching you I feel my eyes drooping and next thing I know I wake up and can’t remember watching the video lol. You just have a very soothing voice that sends me off to sleep I guess haha. It’s always on your video that I fall asleep. Now I have to watch it again because I missed most of it

Allspice isn't a bunch of other spices combined though, it's a specific spice. :) Anyways love the video!

I love Biscoff cookies.
A few suggestions 😊
1 exacto knife
2 use the paper as a stencil and not the letter cut outs.
3 cut your letters from a heavier paper or even cardboard.
4 make your letters from a slightly stiffer dough without baking soda (bicarbonate soda) so it they don't spread.
If you do that you can put the stencil on the big cookie then drop the letter cutouts perfectly spaced

In the Netherlands the name of a similar taste festive cookie is ‘speculaas’. For us sounds Speculoos very familiar.

Isn't allspice one specific spice from a berry?
I am not sure if you are aware of this but speculaas and speculoos are different cookies. 😉 Speculaas, which you made is with mixed spices and speculoos or biscoff is made with just cinnamon and specific baking process to give it's specific flavor and texture..

You know what, I just had a stonking idea (if I can say so myself) when you mentioned buttercream, you could take that biscuit recipe, and make either a cake or even a cheesecake if you put a slight twist on it!

Allspice does not contain the other spices!! "Mixed spice" might, but allspice is not the same! Allspice is a berry that is named that because its scent is reminiscent of several different spices, as in it is similar to, but is not made up of them.
Easy to confuse ground Allspice berrys with mixed spice, but one is a single spice the other is a mixture of many.
This turned out fantastic! Now you just need a giant mug of coffee to dunk it in

But as a Dutchie I have to make a comment about this video. There is a difference between specuLOOS (like Biscoff) and specuLAAS.
Back in the old days the Netherlands was big in the spice-trade so spices were accessible for bakers. So they invented specuLAAS (with cinnamon, cloves, nutmeg, ginger, cardamom and coriander-seed).
Spices in Belgium were quite expensive in those days so they made specuLOOS (the same recipe but with only cinnamon as a spice and probably with more sugar in the form of caramel).
So actually you've made not a real Lous Biscoff ;)

Speculoos is a Belgium biscuit thats a budget alternative than our Dutch Speculaas which has more spices. It has way too much cinnamon for my taste. 😅

Allspice is not a spice blend. It’s a dried unripe berry.

Allspice does not contain them all! Allspice is its own spice!
