- Healthy rice paper dumplings✨

For the Dumpling Filling:▪️1 lb. Ground Chicken (96% lean, not fat free)▪️1/2 Cup Red Cabbage, diced small▪️2 Tbsp Ginger, minced▪️3 Scallions, sliced▪️8 oz. Peeled and Deveined Shrimp, diced▪️1/2 Cup Carrot, diced small▪️2 Cloves Garlic, minced▪️3 Tbsp Cilantro, minced▪️2 Tbsp Soy Sauce▪️2 Tbsp Sesame Oil▪️1+1/2 tsp Kosher Salt▪️1/2 tsp Pepper▪️

For the Dumplings:▪️18-20 Sheets Rice Paper▪️1-2 Tbsp Avocado Oil▪️

For the Sauce:▪️1 Tbsp Cilantro, minced▪️1 Tbsp Carrot, minced▪️2 Limes, juice▪️2 Tbsp Fish Sauce▪️

🌱Vegan Modification: Sub in 1+1/2 lb. firm tofu for chicken and shrimp (squeeze out moisture and then crumble it with your hands); replace fish sauce with soy sauce in the sauce

1️⃣ Mix together the ingredients for the dumpling filling and set aside
2️⃣ Fill up a large bowl with water and place two damp paper towels on a cutting board; soak the rice paper wrapper in water for ~10 seconds (don't leave it in too long bc it will continue to soften as you work) and place on the paper towel
3️⃣ Fold the rice paper in half and then cut with a knife down the middle; break the rice paper in two and put 1 Tbsp filling in the middle of each piece
4️⃣ Fold the sides over to filling (it will create a triangle shape) then flip the dumpling over and fold the excess rice paper onto the other side
5️⃣ Heat a pan over medium heat, add avocado oil and dumplings and cook for ~7 mins on the first side and ~3-4 mins second side until outside is golden brown and inside is cooked through (165F or higher)
6️⃣ Mix together the ingredients for the sauce and enjoy!

Recipe makes about 40 dumplings
If your worried about the ingredients not being Fully cooked, I recommend steaming first and then frying for crunch

I made these tonight and it was one of the most time consuming and frustrating recipes I’ve ever made and I’m an accomplished cook. I just don’t think rice paper vs. wonton wrapper or dumpling dough works. It’s very flimsy and tends to fall apart while cooking. I suppose double wrapping would help but that would double the prep time. Kudos to mom, though, for making such small delicate dumplings. I ended up making mine eggroll style, steaming then frying. The delicate rice paper just couldn’t hold up and never really completely crisped up. I think rice paper is only really good for fresh spring rolls that are delicious and don’t require cooking!

Did you maybe over soak/wet them? That’s been my mistake in the past. They need only a small bit of water, and you work fast before they get too wet/ they will keep absorbing as you fold them

If you want to be sure steam it
Also what I do is I cook everything first before mixing everything together then wrapping it in rice paper. That way everything's cooked. Also it should be between low tl medium heat so that the insides would be cooked and the rice paper would be crispy.
I've never seen so much love go into making a delicious yum yum.

I made these using the rice papers and found it made a mess. I could not successfully get them crispy without them falling apart in the pan.

You can double wrap with two rice papers
How do you get the rice paper to not stick! I’ve tried before & my best turn out was with a pan deep full of oil (tasty, just not the healthiest option for me)

I would precook the ground chicken before adding it to the other raw ingredients, otherwise it won’t be cooked through

Make sure the center fillings are fully cooked. Sizzle fry may be too quick.
I would zap them in the microwave on high first before sizzle fry.
Only way to be sure.
