Combine 1/4 cup soy sauce, 2 tablespoons rice vinegar, 1 tablespoon sesame oil, 1 minced garlic clove, and 1 teaspoon sugar in a small bowl, stirring until the sugar dissolves. Add 1-2 teaspoons chili flakes if desired. Stir in 1 tablespoon finely chopped green onions. Optionally, sprinkle with toasted sesame seeds.

This looks delish, though time consuming. I will give it a try. s there a way to remove the Vietnamese subtitles? They are covering over the English subtitles so you can't see them. Also, one of the ingredients in the marinade says to add seasoning. What seasoning is that? It had a yellowish color which looks like curry but I doubt it since curry is not used in shrimp dumplings.
I'll stick with from-scratch wheat starch dumpling wrappers, thank you. Slow this video down to normal speed and you'll see that it takes considerably longer to fiddle with this sticky mess than it does to roll-fill-crimp scratch dumplings. Also, I have no idea how many takes you needed to get one where the two edges didn't touch and then instantly and permanently fuse to become useless, but it was most certainly more than one.
And also baking soda should not be used to soak the shrimps. Baking soda can be used as a tenderizer. It may loosen the meat of the shrimps. It will lose the firmness though.
To make a dipping sauce for shrimp dumplings, mix 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 teaspoon of sesame oil, 1 teaspoon of chili oil (if you like it spicy), and 1/2 teaspoon of sugar in a bowl. Add 1 minced garlic clove, 1/2 teaspoon of minced fresh ginger, and 1 teaspoon of finely chopped scallions. Stir everything together until the sugar is dissolved. Serve the sauce alongside your shrimp dumplings and enjoy! 😊

Since rice paper is transparent, a dark colour plate would have been more useful than white. These things need to be kept in view while making a video for better impact.
It's not that bad. Nowadays, not many dim sum chefs can make very thin har gaw wrap with wheat starch. Not even the chefs can make good thin wheat starch wrap, so it's an alternative to most of the home chefs. It's not original, but if it provides a very close texture of the wheat starch wrap, I may accept it as an alternative though.

A pretty good sauce for this is some soy sauce, a little water, chili powder or fresh chilis, a little white vinegar, sugar and splash of sesame oil.

Instead of chopping shrimp… Smash the shrimp with side of knife on chopping board. It’s a lot easier and it takes seconds.
