材料 Ingredients
牛尾 約1公斤 Oxtail stews 1kg
甘筍 2-3條 Carrot 2-3pcs
蕃茄 6個 Tomato 6pcs
洋蔥 1個 Onion 1 pc
蒜頭半個 Garlic 7-8 cloves
薑7-8片 Ginger 7-8 slices
冰糖80-90g Rock sugar 80-90g
Sauce:
蠔油 2湯匙 Oyster sauce 2 Tbsp
茄汁2湯匙 Tomato ketchup 2 Tbsp
豉油2湯匙 Soy sauce 2 Tbsp
HP醬2湯匙 HP sauce 2 Tbsp
清酒2湯匙 Cooking wine 2 Tbsp
麻油1湯匙 Sesame oil 1Tbsp
白胡椒粉少許 White pepper few pitches
香葉數片 Bay leaves few pcs
鹽1-2小匙 Salt 1-2tsp
水適量 Water for simmering

我入厨五十多年經驗我提議肉食很小落麻油海鮮比較多些茄汁炆醬汁濃味醬是不用加麻油的加左变了不論不類OK

今日整咗,但唔記得落蕃茄,落咗洋蔥薯仔紅蘿蔔,都好好味
蕃茄煮完糖份溢出肉質差不多會溶哂, 令汁味道更濃稀入味,用薯仔也可, 只是澱粉比較重, 下次也試下蕃茄再比較下.

也可叫甘荀,視乎品種。但其實中文雖然有分甘荀或紅蘿蔔,但英文就只會叫carrot. 有時㷛中湯好粗的會叫紅蘿蔔,比較瘦長冇乜泥的叫甘荀,但其實你叫蘿蔔或甘荀大部分人也明
