Chef a little tip I heard from another chef. After you put the calamari in the flower and shake them up. Set them aside for 15 or 20 minutes. This allows the seasoning to adhere to the calamari

I couldn't get back to your reply but I had Frozen calamari rings. It's real hard to get calamari down here fresh. So I let him soak in buttermilk for 2 hours.make him out pretty tender a little chilly but not bad and they were great my neighbor even like them she said it was a great. Thanks to you.
I love it. It's a darn good recipe. Thanks for the navy. I bought some Frozen calamari rings because that's all we have here. I put them in some milk and vinegar. But I'm going to try lemon juice the next time. It came out very crispy the first time I'm going to try to improve on the recipe.

I was curious if air fried Calamari would come out similar and glad to know it does, don't have to mess with getting all the oil for a traditional fryer.
Every time I see it I like the way you do it. I tried the air fryer it didn't work I'm sticking with 2 minutes that's it. Whenever I go to a restaurant I tell him to fry them light. That way they don't overcook them.
No buttermilk but liked the squid breakdown for cooking and to know air fryer works. Have a few left from thawing a box of squid(science teacher dissection days) today so going tp look into it more and go for air fryer.
I’m cooking these tonight (sorry, frozen not fresh), and I have all the ingredients covered here. I make them once every 10 years, so I don’t have any technique. But once it’s bagged in the coating, can you do that ahead of time an hour or two, refrigerated, and throw it in the fryer when it’s time? Or at least mix the coating in bag way ahead of time, and let the calamari marinate for a more extended time, like 2 hours?
hello. mine came out chewy. i just used cornmeal and egg milk mixture. i dont have butternmilk or cornstarch. how can i make it work ? i tried air fryer one.
@@mikethestewburner5505 thank you mike for responding! im using the air fryer lid. i used a zatarin air fryer cornmeal and frozen calamari i think the cornmeal is the issue. i will buy flour, cornstarch, and buttermilk for next time.

Are you using fresh squid or frozen? I find that buttermilk is the key as the acid in the buttermilk helps to tenderize the squid
